The cake is incredibly tender and has a lovely texture that makes you want to rip out more and more pieces... And most importantly - a lot of fruit in addition! What kind? Any kind! I have "The classic" apples, but fine with plums or cherries, and for someone with peaches or strawberries, pears or blackberries! It can be made not only spicy, but also chocolate! This cake builder works with all of your imagination! The recipe is not complicated, even a beginner can do it!

Dough

  • Cinnamon (The highest grade TM Haas) - 3 g
  • Butter (82,5%) - 200 g
  • Nutmeg - 1 g
  • Salt - 1 pinch.
  • Chicken egg (CO) - 4 pcs
  • Wheat flour / Flour - 250 g
  • Dough leavening agent - 10 g
  • Milk - 130 g
  • Apple (medium size) - 1 pc
  • Vanillin (TM Haas) - 0.5 sachet.
  • Brown sugar - 200 g

Top layer

  • Apple - 500 g
  • apricot jam - 150 g
  • Vanilla sugar (TM Haas) - 1 sachet.
  • Sugar - 90 g
  • Gelatin (TM Haas) - 10 g

How to cook a very simple and delicious spice cake step by step with photos


A small set of ingredients for the dough: room temperature butter, brown sugar, milk, eggs, flour and baking powder, and an apple. Nutmeg, vanillin and cinnamon of the highest grade TM HAAS as spices, as it turned out that not all cinnamon is what it's sold as. And the highest grade cinnamon TM Haas delighted with its delicate and subtle flavor, not a hint of bitterness and astringency!

Add cinnamon, nutmeg and vanillin to room temperature butter. Did you know that spices are better added to fats or dairy?? It turns out that way the flavor unfolds better and lasts longer! Follow the spices with brown sugar. Of course you can also cook with white sugar, but then at least 1/4 of it should be replaced by honey. Whisk the butter with the spices and sugar into a fluffy mixture.

If you are the lucky owner of a stationary mixer, while beating, peel the apple from the seeds and cut randomly into small pieces, if the skin is not rough, you can not remove it.

Next, add the eggs to the butter, one by one, thoroughly mixing the previous one. Add sifted flour with baking powder, beat with a mixer until homogeneous.

Lastly add milk in small portions. The dough should be smooth and puffy, resembling cream.

Now all we have to do is stir in the apple slices, and the cake batter is ready.

Form a diameter of 18-22 cm, line the bottom with parchment and spread the dough, smooth it out well. Leave in the oven heated to 180C for 50-60 minutes. Depending on your oven, pierce the cake with a skewer after 50 minutes to see if it is ready to be taken out or if it is still a good idea to keep it in the oven. While our pie is cooking let's do the fruit layer.

We have a huge apple crop this year, so I have apple pie! Peel the apples and cut them into not too small pieces. I make a 18-20 cm pie, about 400g of peeled apples, but if you want to make a pie that is larger than 20 cm, it's better to add 500-600g! Add sugar, vanilla sugar and apricot jam to the apple slices. You can make any kind of jam, the main thing is that it will be thick and have a delicate flavor that you like.=)) You can also increase or decrease the amount of sugar, it depends on the sweetness of the fruit. We put the apples on the stove on low heat, the main thing is that they do not burn at the bottom, but have time to give enough juice and boil. We do not need to boil them for a long time, just until they are comfortably soft, 5-7 minutes. Stir carefully so it does not turn into a mashed potato.

You should have: soft pieces of fruit and syrup on the bottom. Drain the hot syrup, dissolve 10 g of Haas gelatin in it and send the syrup back to the apple slices. Let it cool.

When our pie is completely ready take it out of the oven, let it stand in a form for 10 minutes, and put it on a plate. When the pie is a little warm you can put a fruit layer on it. If the top of your pie is really puffed up with a dome, then trim the pie by just cutting it off.

If you want aesthetics and nice slices, then set a ring rim and lay the fruit slices on our pie. Then pour the rest of the syrup and gelatin over the fruit. And leave it in the refrigerator until it hardens.

If you are making it for yourself and want to eat it right away, you can skip the step with the gelatin and cut the pie right after laying the fruit. After all, apples and apricots contain quite a lot of pectin, it stabilizes liquids, and the top of the pie will firm up a little by itself when it cools. All that's left is to pour the tea and invite the family to the table!
