I'm excited to share this recipe for a delicious fudgey crumbly pie. A friend made it for me yesterday. I made a recipe, asked for all the secrets of cooking, and this morning I rushed to the cottage for plums and currants, I really wanted to make such a pie for my family) I cooked for the first time, and at the same time decided to take pictures of the whole process. I really wanted to share it with you while there is fresh fruit)! Welcome to my pie compote that really melts in your mouth!!! The pie is very quick and easy to make!

Ingredients for the airy plum-cherry pie:


  • Sugar (100g for the crust and 70g for the crumble) - 170 g
  • butter (150g for the crust and 40g for the crumb) - 190 g
  • Vanilla sugar (10g for the cake and 1 teaspoon for the crumble) - 1 sachet.
  • Cinnamon - 1/2 teaspoon
  • Wheat flour / Flour ( 150g for the crust and 70g for the crumb) - 220 g
  • Corn starch - 30 g
  • Salt (or pinches) - 1/4 teaspoon
  • Leavening Agent - 1.5 teaspoon
  • Plum - 10 pcs
  • Blackcurrant (handful) - to taste
  • Chicken egg (3 piece)

How to cook airy plum-cherry pie step by step with photos


The products we need for the pie. I also forgot to add eggs and cinnamon.)

Mix 150g of soft butter with 100g of sugar and 10g of vanilla sugar.

Beat the mixture well with a mixer until it is white and glossy (first secret). It is very important to make the dough light and airy. Approximately 2 to 4 minutes., It all depends on the power of the mixer.

Next, add eggs at room temperature one by one and also whisk thoroughly after each one.

This is how a nice airy mass is formed.

In a separate bowl add 150 grams of flour, 30 grams of starch, salt, cinnamon and baking powder. Then sift and add to the egg-oil mixture. Beat well.

Spread the dough in a cake pan of 24 cm in diameter. Put parchment paper on the bottom of the mold, do not grease it. The dough, as you can see on the picture, is not too runny, but it should not be too hard either. Spatula to pour it out evenly.

Ingredients for the filling. Wash and dry the plums and currants on kitchen paper.

Cut the plums in half, remove the seeds and arrange them in a circle, cut side up in a single layer. Place the currants between the plums. And now a little secret from me - if you want the pie to be even more tender and melting, you can remove the skin from the plums.

Now make the crumble, or streusel, as they call it. Mix 40g of cooled butter with 70g of sugar and 1teaspoon of vanilla sugar until smooth

Then we add 70g of flour to this mixture and knead it with a fork. For more flavor and to give the taste of the cake an extra nutty touch, I made the crumble with 30g of sesame flour and 50g of wheat flour.

I took a strainer with large holes and passed the mass through it, sprinkling berries on top. The result is a very nice crumb! We put the pie into oven heated up to 180° and bake it for 35-40 minutes. You can check it with a wooden toothpick. I have a gas stove and no degree indicator, so I baked on medium heat and after 30 minutes. The pie was ready, the crumb became a beautiful golden color.

Let the pie stand in its pie mold for 10 minutes., Then we put it on a rack until it cools completely.

The pie turns out very fragrant, crumbly, you could say festive - it looks so beautiful in the cut with its golden plum flounces and crunchy nut crumbs)! Unfortunately, I couldn't take a picture to convey this beauty to you, so you can either take my word for it or bake it and enjoy your creation)!!!
