Why is it called "almost mama's" you might ask? Because originally I was going to share my mom's grated pie recipe. But when I started making it, I wanted the cake to be softer: I changed the dough, changed the molding, and sprinkled streusel of cereals over the grated dough "Mistral" (although I'm still an inexperienced cook, I do not know why - I'm always changing something, remaking, making up - my hands are stretched! Try it, my family really liked it!

  • Wheat flour / Flour - 2.5 glass
  • Chicken egg - 2 pcs
  • Butter (softened) - 1 package.
  • Kefir - 0.5 glass
  • Soda - 1 teaspoon
  • Citric acid (Soda quencher - or lemon juice or vinegar)
  • Sugar (less can be used) - 0.5 glass
  • Vanillin (to taste)
  • Jam (any or berries with sugar/honey) - 3/4 glass
  • Oat flakes (TM "Mistral" with bran) - 5 tablespoon
  • Honey - 0.5 teaspoon

How to cook cake "almost mom's" step by step with photos

Set aside about 30g of butter for the streusel, and a little to grease the cake tin; whisk the rest with the sugar or powdered sugar

Add the eggs, vanilla and whisk to combine

While the mixture is still fairly homogenous

Melt baking soda in 1 tablespoon of kefir (or citric acid, if it does not react), pour it into the butter mixture

Pour the rest of the kefir, mix. By the way, it was not necessary to whip everything at the beginning, it's just faster. You can mix everything with a whisk or a spoon

Sift in 2.5-3 cups (250 ml each) of flour.

Knead a light, sticky and soft dough

My mom's pie had only 1 tablespoon of kefir and the dough was like dumplings, you knead it by hand and just put it on the bottom of a mold or baking pan, roll a sausage roll, freeze 1/3 of the dough and then rub it onto the pie. My dough was more troublesome: it was a little too runny and sticky for kneading by hand, so I poured it into a mold and spread it with a spoon from the center to the edges, making the rims. But it was well worth the effort, the pie comes out very delicate inside. You don't need any rims, you can just pour it on the tray and distribute it evenly
