  • Wheat Flour / Flour - 1 glass
  • Sugar - 1 glass
  • Cocoa powder (with sprinkles) - 3 tablespoon
  • Buttermilk (Nonfat 1% buttermilk can be used) - 0.5 glass
  • Vegetable oil - 1/4 glass
  • Chicken egg (large, category C0) - 1 pc
  • Natural coffee (freshly brewed, hot) - 0.5 glass
  • Soda - 1 teaspoon
  • Dough leavening agent - 0.5 teaspoon
  • Salt - 0.5 teaspoon
  • Vanillin - 1 g
  • Mascarpone - 120 g
  • Cream cheese - 110 g
  • Powdered sugar (to taste, you can make it sweeter or vice versa) - 2 glass
  • Strawberries - to taste
  • Raspberries - to taste

How to cook American chocolate cake step by step with photos


Preheat oven to 175 degrees, mold 24 cm. We do the usual: oiled and dusted with flour, line the bottom with parchment paper. About the measures: 1 cup - 200 ml cup., I measure everything in it.

First, we mix the dry ingredients, which are flour, cocoa powder, baking soda, vanilla, baking powder and salt.

A few words about cocoa powder. Use only cocoa powder that is tried and tested and of good quality, otherwise you risk having a cake with "sand", that squeaks in your teeth (not a very pleasant feeling, I've tried it). In order to save money, some producers use low-quality cocoa, which means cocoa powder + hulls from the same beans. Cheap and sulfurous, the feeling is unforgettable. I use.. "Golden Label" from "Red October".

And just a little more about baking soda. I only use a special baking soda, this is what it looks like, you can use any other, but just not the one sold in a brick packet (the same, universal, and cure your throat, and pots and pans to wash the stove). When you add baking soda, you'll be sure that you won't get its taste in the finished dish and it will work above all expectations.

Next. In a large bowl, sift our dry ingredients. Add sugar and use a whisk to mix it all up, a couple of strokes should be enough.

Next are the wet ingredients. Buttermilk is a miracle, all American chefs use it for baking. You can't find it in our stores, only at agricultural markets. Usually I substitute it for nonfat kefir, the effect is the same. Now I decided to try to make something similar to buttermilk. I took the milk and added one tbsp. Spoon of lemon juice (you can use vinegar), you need to wait 10 minutes. and the pseudo buttermilk is ready. The recipe worked to perfection.

Mix buttermilk (or kefir), egg, butter. All ingredients at room temperature, very important for great baking.

Coffee. Make sure it's fresh, grinded-brewed just right. I made it with instant (I always like to keep things simple), and then with fresh, the difference, of course, is amazing. And the taste and flavor are top class.

We mix the wet ingredients with the dry ones with a mixer on the slowest speed, you don't have to whisk, you just have to mix. The dough may seem runny but it will be even more, brace yourselves.

The turn of the hot coffee, pour it in, mix on the slow speed of the mixer and that's it, a minimum of work with the mixer.

The dough is wonderful, don't let the flavor and the consistency scare you, it will be very, very good. Tasted it a little bit, could barely keep from drinking the whole bowl, so be prepared, keep yourself in check. In the oven for 35 minutes. Check readiness with a wooden skewer (a little fancy?), okay, with a toothpick.

This is a beauty. Color, shape, flavor - well, everything is perfect. 5 minutes. in form, then take it out and put on the wire rack until it cools completely.

This cake owes its inimitable taste not least to this creamy custard. I'm sorry. We mix the cheeses and powdered sugar + a tablespoon of lemon juice. It's genius. And this cream, I would eat it for breakfast, lunch and dinner. By the way, I use it very often for baking.

We spread the cream on the cooled cake and top with berries. Do not worry, if the strawberries and raspberries are not sweet enough, the sweetness of the cream will save them, and their sourness will expand the range of tastes. What can I say, this is my favorite pie, the taste is magical. Creamy cream combined with such rich chocolate cake, aaaaahhhh, this is a must try, I can't describe it. Love it for life, to the last crumb. Also, if you double all the ingredients, you get a dough for 2 cakes and a full-fledged cake. There you go :)
