Apple Dream Cake

What a miracle, these small, cozy German cafes...
On occasion, or more often without, I like to stop by where they sell my most favorite baked goods - delicate apple pie, which was and still is my favorite apple dessert. Juicy apples with a slight intoxicating aroma of Calvados and cinnamon, thin crispy dough - a true bliss for all apple lovers. Let's get to it?
Ingredients for the cake "apple dream":

How to cook cake "apple dream" step by step with photos

Yes, it's a lot of products, but trust me, it's worth it.

Sift flour and baking powder, add 125g sugar, salt, butter (margarine) and 2 eggs. |
|
Form a smooth dough, wrap in clingfilm and leave to chill for 30 minutes. |
|
Fill raisins with 2 tbsp.l. Calvados. I didn't have Calvados, so I poured brandy.
For those who are not very fond of alcohol, leave the raisins without the filling. |

Wash and peel the apples, remove the seeds. |
|
Squeeze out the juice of a lemon. Leave 1-2 tbsp.l. for the glaze.
Cut the apples in small pieces and drizzle with lemon juice to prevent them from turning black. |

Bring 350 ml of dry wine, 125 grams of sugar and cinnamon to the boil.
Make sure you have a large saucepan. |

Bring the apples in and simmer over low heat for 5 minutes. |
|
Stir in 2 boxes of vanilla pudding and 5 tbsp.Spoonfuls of wine and 5 tablespoons.tbsp cold water. |
|
Take pot with compote off heat, add liquid pudding and raisins. Stir well. |
|
Grease a baking dish (d=26 cm) with butter.
Divide the dough into two unequal parts - 2/3 and 1/3. |
|
Roll out the larger part of the dough to a diameter of 32 cm. I roll it out between two sheets of baking paper - it's much more manageable that way. |
|
Roll out the dough into the mold, distributing it, making a rim the full height of the mold (6-7 cm).
Prick the dough with a fork and sprinkle with breadcrumbs. Spread the apple filling evenly on top. |

Whip the egg yolk with 1 tbsp.l. cream.
Press the loose sides of the cake against the apples and brush with some of the egg yolk and cream mixture. |
|
Roll out the smaller part of the pastry to the diameter of the tart (26 cm), put it on the apples and press the edges together. I used a fork to help me, pressing the dough against the sides.
Brush the pie with the remaining egg yolk mixture and prick it with a fork.
Preheat oven to 200 gr., Bake for 50 minutes. |

Remove from oven. Let the pie cool slightly.
Carefully take it off from the ring.

Dilute 50g of powdered sugar with 1-2 tbsp.l. lemon juice.
Glaze the cake randomly.
I sprinkle the rant of the cake with decorative sugar. |
