I know there are many similar recipes, but I want to share with you this particular pie that my family adores! Why "dumplings"-Because that's how we call it, and it's the recipe that's used to cook it in our region, in western Ukraine (Carpathian Mountains). Its advantage is that the apples are three times more than the crust, and the crust comes out not dry as in most cakes and tasty and soft. Try it yourself!

Ingredients for apple dumplings (pie):


  • Wheat flour / Flour (either 3 cups without topping or, if you don't have a scale but a measuring cup, 250g with a yardstick for "water") - 450 g
  • Margarine - 250 g
  • Sugar (200 in crust and 50 in apples) - 250 g
  • Chicken egg - 2 pcs
  • Sour cream - 2 tablespoon
  • Dough leavening agent (I only take Polish! Weight 16g) - 1 package.
  • Lemon - 1 pc
  • Vanilla sugar - 2 pack.
  • Apple (not peeled) - 2 kg
  • Salt (peeled )
  • Cinnamon (as you like and strictly to taste)
  • Raisins (as desired)

How to cook apple dumplings step by step with photos


Pour the flour into a bowl (if you don't have scales and you measure with a 250 g glass or measuring cup, then pour the flour easily, don't knock with the glass, but shake lightly, so that the surface is level, because if you knock with the glass with the flour, the flour will settle and thus there will be more flour than necessary), and rub margarine on top with a coarse grater.

Then rub the margarine and flour lightly with your hands to make a fine crumb. And in a separate bowl grate lemon zest.

In a separate bowl extinguish the baking powder with lemon juice (squeeze it out of the lemon powder).

Add 2 tablespoons of sour cream to the quenched leavening powder and mix.

Add sugar, salt, eggs, vanilla sugar, lemon zest and softened baking powder to the flour and margarine. And at the end, if you like, add raisins (just rinse and dry and do not need to pour boiling water over raisins).

Knead the dough, but don't add any flour! The dough will be very sticky to your hands, but this is good, otherwise the dough in the pie will be dry! Then put the dough in the fridge (you don't need to cover the bowl with anything, unless you plan to bake right away, then cover with a normal lid).

Peel and grate the apples in slices (if you don't have a slicer, you can also slice them, but as you won't slice them very finely, give less apples, about 1 kilo already cut, because if they are not finely grated, the middle layer won't bake - tried it out)!). Add sugar to apples (I give 50g - but my apples turn out sour, so if you like it sweet add more sugar, in short taste...), vanilla sugar, cinnamon (I give just a little, just to accentuate the flavor, not overpower it!) and mix lightly.

Grease a baking dish and sprinkle with flour, or line it with parchment. Spoon out the dough (you won't be able to roll it out, don't even try), sprinkle the dough with flour and stretch it over the mold). I have a form with a 32-21 cm bottom.

With your hands stretch out the sides of about 4-4.5 cm (that is high enough).

Put apples on top of the dough. And put it in a preheated oven up to 180 degrees for about an hour. I do not advise to take it out earlier in order to bake apples.

Check for readiness with a toothpick (pierce the rim, that is, check whether the dough is ready and also check the apples). Allow to cool in mold and then you can pull out. Generally, you'll see by the baked rims if the dough is baked, too.
