I've been making this pie for February 23 for over 25 years. For a man's holiday, baking a cake is too tender, but a cookie cake is just right. In the early years of marriage the traditional filling has not yet been established, but with the first move for my husband, an officer, it turned out by itself. I am an Alma-Ata girl myself, who grew up practically in my dacha among apple trees. Apples are my favorite fruit even now, when there is an abundance of fruit. And left my beloved city for my husband first to Semipalatinsk, and there lingonberries grew in the forests around the city. And later we served in the land rich in lingonberries. And within a few years the pie became a family specialty. The shape of the pie, the decorations, and the preparation of the filling itself may have varied. But the dough on milk, egg yolk and margarine, from my grandmother's elder sister, remained unchanged. And the filling-apples, cranberries, and sugar. Simple and wonderfully tasty and harmonious. My husband went into the reserve, but my eldest son already got his senior lieutenant, and my middle son returned from compulsory military service as a junior sergeant just before the New Year. Obviously, the holiday of real men was warmly celebrated. And the pie was big and delicious.

Ingredients for apple and lingonberry pie "for my men":


  • Milk - 300 ml
  • Egg yolk - 4 pcs
  • Sugar (6 spoons in the dough and 3 in the filling) - 9 tablespoon
  • Margarine - 80 g
  • Wheat flour / Flour - 3.5 glass
  • Semolina - 3 tablespoon
  • Yeast (SAF momentum quick - a scoop and a scoop) - 1 teaspoon
  • Apple (medium) - 4 pcs
  • Lingonberry (frozen ) - 1 glass
  • Corn starch - 1 tablespoon
  • Butter - 1 teaspoon

How to cook apple and lingonberry pie "for my men" step by step with photos


Sift flour twice, cut margarine into cubes. Place the ingredients into the mixer bucket, following the instructions for your model.

Add the sifted flour, semolina and CAF instant yeast. Set the dough kneading and proving program. I have it for 2.5 hours.

Peel the apples - 3 pieces - and cut into small cubes. Place in a hot pan with melted butter, sprinkle with sugar and stew, stirring until softened and caramelized. Add the frozen cranberries, simmer for a few minutes and let cool.

Add the starch to the cooled filling and stir well. Cut the fourth apple in half and cut into thin slices with the skin.

Divide the ready dough with buttered hands into slices the size of large eggs.

Roll out each piece into an oblong oval, lay a little of the filling in a path and seal the edges well. Make a spiral shape by turning with a seam inside and put slices of apple.

Place loosely in a greased mold and let stand.

Brush the risen cake with the egg yolk and milk and sprinkle the sugar on top.

Bake at 180 degrees until soft and crispy. Allow to cool slightly in the off oven. Then take out on a rack, cover with a napkin and cool completely or serve slightly warm.
