Apple, Nut and Cinnamon Pie

Dough

  • Wheat flour / Flour (+-15 g) - 350 g
  • Water - 200 ml
  • Sugar - 25 g
  • Salt - 1 pinch.
  • Lemon (zest in the dough, juice in the filling) - 1/2 Piece
  • Vanillin - 1 g
  • Corn oil - 50 g
  • Yeast (dry fast) - 1 teaspoon

Stuffing

  • Apple - 200 g
  • Cinnamon - 1 teaspoon
  • Walnuts - 50 g
  • Sugar - 50 g

How to cook apple, walnut and cinnamon pie step by step with photos


Sift flour and mix with salt, yeast, sugar, vanilla and zest of half a large lemon. Pour in water and corn oil (or refined sunflower oil).

Knead the dough. The dough is soft, delicate, malleable, and not stiff. And since flour from different manufacturers differs in its qualities (density, moisture, gluten content), you should not pour all of its specified amount at once. You may need less flour, or on the contrary, will have to add a little. Put the dough in a bowl greased with oil and cover with plastic wrap. Oiled bowl, cover with clingfilm and leave to rise for 30-35 minutes in a warm place. The dough is very light and rises quickly.

Mix sugar with chopped walnuts and cinnamon. The amount of cinnamon is notional. Some people like it and can put more. Some people don't like this spice very much. Cut a medium sized apple into slices about 3 to 4 mm thick. (remove core, halve, then cut into quarters) Pour juice of half a lemon over apple slices.

On a floured work surface, place the proofed dough, knead and roll out into a sheet of dough about the size of 45*25 cm. Visually divide the dough lengthwise into four parts. Leave the top free and spread out the apple slices (blot with a paper towel to remove the lemon juice) in three rows, 7 at regular intervals, on the rest of the pastry.

Sprinkle the apple slices evenly with a mixture of sugar, cinnamon, and nuts.

Cover the apple slices with a loose piece of dough and then gently roll up the dough. Cut into seven equal slices. Each small roll contains three apple slices.

Place the rolls in a baking dish lined with parchment. Grease the bottom and sides of the form with oil. The diameter of the dish is 20-22 cm. Put remaining apple slices between rolls. Put the cake in warm for 15-20 minutes, covered with a napkin or a thin towel. Bake the pie in a preheated 180° oven for 35-40 minutes. Baking time depends on the power of your oven.

Do not pour out the lemon juice left over from the apple slices! You can add powdered sugar, mix it well and it will make an excellent icing for the pie.

If the pie gets really browned, you can cover it with baking foil 20-15 minutes before the end of baking. Take the finished pie out of the mold, place it on a rack, and be sure to cool. Drizzle with icing or sprinkle with powdered sugar. Done!
