Of course, you can never have too many apple pies, but this one is very special. It's kind of like a regular charlotte, but the sourdough gives it a whole new flavor. This is the best apple pie I've ever tasted. It's very tender, moist, and flavorful! And you can see how much my family liked it at the end of the recipe ;)

Ingredients for apple pie with sourdough:

  • Sourdough - 200 g
  • Wheat flour / Flour - 300 g
  • Sugar - 150 g
  • Chicken egg (not large) - 4 pcs
  • Milk - 150 g
  • Vegetable oil - 80 ml
  • Apple - 4 pcs
  • Cinnamon - 1 teaspoon
  • Cardamom - 0.5 teaspoon
  • Raisins (optional) - 2 tablespoon
  • Walnuts (optional) - 2 tablespoon

How to cook apple pie with sourdough step by step with photos

The cooking time is specified without taking into account the rise of the dough. So, in the evening (you can at any time of the day, whatever you prefer) we take the sourdough out of the fridge, add the milk and 200 grams of flour. The original recipe suggests replacing half of the flour with whole wheat flour, but I didn't do that. I'm all for a healthy diet, but within reason. Sometimes you have to indulge in baked goods on 1/2-inch flour. Knead the dough well, cover it with plastic and leave it overnight at room temperature.

The next morning (8 hours later) beat the eggs with the sugar and a pinch of salt

until the mixture becomes fluffy.

Add butter and 100 grams of flour, mixing all the ingredients well.

At the end, add the first batter, mixing gently from bottom to top. The pastry is thick, so it trickles down like a ribbon from a spoon. Cover the dough and leave it to stand for 10 minutes. Then peel the apples and slice them. You can also add raisins, lemon zest, nuts, but this time I did not add.

The original recipe called for the following pie shape. Pour half of the mixture into the tin (I used a spring form tin.26)

Place half of the apple slices in a circle.

Cover with the rest of the pastry. Spread out the rest of the apples.

The dough rises, all the apples end up inside and practically dissolve into the pie when baked.

I prefer this design. Pour all the batter into the mold and poke the apple slices vertically. Leave the pie at room temperature for 4 hours. It doesn't need to be warmer than 20-22 degrees at all.

My sourdough is very strong, even in the refrigerator it rages, so after 3 hours the dough was already trying to leave the mold. So check your dough, you may need more or less than 4 hours. Now preheat the oven to 200°C Reduce the temperature to 180°C and bake for 45 minutes. Turn off and leave the pie in the oven with the door open.

When the pie has cooled in the oven, take it out, let it cool completely and cut. I got a little distracted and half of the pie disappeared.

So I can only offer you this slice. :)
