Autumn... Personally, I love a warm fall! Like last year... With lots of sunshine and leaves glistening bright yellow and brown... And how I hoped it would be the same this year!!! And here we are?! Looking out the window - sun, sky, clouds - beautiful! When you go outside, it's windy, cold, and the sun is hiding... So what to do??! Right! To cook something delicate, but at the same time bright, juicy and very sweet! I propose a compromise: I owe you a pie with apples, strawberries and custard, from the fall - some more warm sun!

Ingredients for the pie "autumn compromise":


  • Kefir (into the batter) - 250 ml
  • Brown sugar (250 ml in batter, 125 ml in cream, 50 ml in stuffing) - 425 ml
  • Wheat flour / Flour (pancake flour, 500ml in batter + 2tbsp.l. cream + 2 tablespoons.l. stuffing) - 560 ml
  • Chicken egg (2pc in batter + 2 yolks in cream) - 4 units
  • Soda (into batter) - 1 teaspoon
  • Vegetable oil (into the dough) - 1 tablespoon
  • Butter (1 tablespoon.l. for dough + for greasing the molds) - 1.5 tablespoon
  • Vanillin (into batter and cream) - 0.5 teaspoon
  • Milk (into the cream) - 250 ml
  • Strawberry (in the stuffing) - 350 g
  • Apple (big, into stuffing) - 1 pc
  • turmeric (in cream)
  • Powdered sugar (for decoration of the cake)

So, let's proceed! First, let's make our basic dough. We are going to take 1 cup of brown sugar (as you have probably already understood, today our cup is 250 ml :-) ) and put it in a container, where we are going to prepare the dough.

In the same place we add: 2 eggs, 1 cup of kefir (I use 3.2 percent) and 2 cups of flour.

While beating the dough add: vegetable and butter, a little vanilla and baking soda. You can put in the baking soda whatever you like: citric acid, lemon juice, vinegar, etc.д., I used grapefruit juice. If you suddenly had nothing on hand - use a teaspoon of the same kefir.

After you have combined all the ingredients and whisked for 10 minutes, you will get a dough the consistency of sour cream medium-fat. The dough can rest for 10 minutes, during this time we just preheat the oven to 180 degrees.

And also take out the pie tin (I have a sectional, 25cm), warm it a little in the oven, grease with butter, sprinkle with flour...

Carefully pour a little more than a third of the dough into the prepared mold and put it in the oven for 10 minutes to let the base of the pie "a little bit". And I advise you to set a timer, at this point it is easy to get carried away with further cooking and forget about the oven :-D.

Now let's prepare the different toppings! For the strawberry filling, we need 350 grams of strawberries (I have frozen).

Thaw the strawberries, and add 50 ml of brown sugar, and 2 tbsp.l. of flour ...

We blend them with a blender until smooth. The strawberry filling is ready! We put it away temporarily, but not too far...

By this time 10 minutes have probably passed, our timer has sounded, so we take the base of the pie out of the oven. Don't turn off the oven, we'll need it again soon.

Next, we'll take the apple. It's simple: we have to wash it, peel it, and cut it into these little pieces.

Now, let's put the apple aside and make the cream. We will mix 2 egg yolks and 0.5 cup (125 ml) of brown sugar, then add 2 tablespoons of flour and stir well. Continue heating the milk on the stove, and when it is warm, add our egg-sugar mixture and a bit of turmeric. Continue heating the cream until it comes to a boil and thickens, STILL stirring. About the turmeric: I added it for color. So if you have nice orange yolks, you can do without it. When the cream is ready - take it off the stove and let it cool a bit.

Here comes the fun part! Let's assemble the pie: put apples on the base...

We put a little bit of strawberry filling on apples, and then lay out with tablespoons in random order: the rest of pastry, cream and strawberry filling. When all the ingredients are done, use the back of a tablespoon to move it from side to side and "in a figure of eight" - to make a nice pattern.

It's done! Let's send our cake in the oven (I remind you that its temperature is 180 degrees) for about 40 minutes. When the cake is ready, check it with a toothpick, as usual, giving special attention to the darkest golden areas, because the cream will not cook all the way through :-).

When the pie is ready, turn off the oven, let the pie cool in it for about 10 minutes, and then take out our delicious beauty to let it cool completely. After the cake has cooled, we take it out of the mold, sprinkle it with powdered sugar and put it on a plate. Ideally, of course, the cake should stand for a few hours, because then it becomes soaked with our filling and becomes much more tender O:-) Now, let's make some tea and enjoy it! :-*
