I suggest to make a pie with a filling in the form of a loaf. The filling can be anything you want, I have meat with mushrooms. And the autumn style toppings on the pie would be very pretty.

Ingredients for Turkish Flan Pie "autumn leaves":

Pie Dough

  • Water - 100 ml
  • Chicken egg - 1 pc
  • Wheat flour / Flour - 350 g
  • Sugar - 3 tablespoon
  • Salt - 0.5 teaspoon
  • Yeast (dry) - 1 teaspoon
  • Vegetable oil (TM "Oleina") - 5 tablespoon

White dough for decoration

  • Water - 40 ml
  • Wheat flour / Flour - 70 g


  • Mushrooms - 250 g
  • Ground meat - 250 g
  • Onions - 1 pc
  • Carrot (small) - 1 pc
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil (for frying) - 4 tablespoon

How to cook cake "autumn leaves" step by step with photos

Make stuffing. Chop the mushrooms (I have chopped beech mushrooms) finely and fry in oil (2 tbsp. l). For this recipe I use Oleina sunflower oil.

In a pan fry the onion and carrot with 2 Tbsp. Add minced meat, salt and pepper to taste, and fry until soft. Mix fried mushrooms and minced meat.

Make the dough for the garnish. Mix water and flour, knead dough, put it in a baking dish, let it rest.

Make yeast dough for the pie. In a bowl mix warm water, sugar, yeast and some flour, it will be a stew, consistency like sour cream. Cover the bowl and put it in a warm place until the leaven increases in volume, about 20-30 minutes. Then add the egg, vanilla, salt, and cooking oil and mix well.

Add flour and knead the dough, knead well with your hands. Since flour varies, you may need more.

Place the dough in a warm place to rise. For this purpose, I use a multicooker and heat the bowl on the warming function and turn it off. Once the dough has increased in volume, crumple it and let it rise again.

Divide the dough into two parts, roll one part in a circle, I did it on a non-stick sheet.

Spread out the filling as on the photo.

Roll out the second part of the dough in a ribbon shape, about 10-12 cm wide.

Place the pastry on the filling and press on both sides as shown in the photo.

Fold out the dough from the outside and cut a cross in the middle, tuck in the corners and place on the cake surface.

Now take the white dough, roll it out and cut out four maple leaves using a stencil.

Grease the surface of the cake with an egg and water, put the cut out leaves on the cake.

Cut out little florets from the white pastry.

Decorate the cake with the flowers, as on the photo. Roll up small balls of yeast dough and place them on the leaves.

To put the cake in a warm place for rising for about 30 minutes, for this I heat the oven to 50 degrees and turn it off.

Here is the pie after proofing, it has increased in volume, it became soft.

Bake the cake in the oven at t=180 C for about 30 minutes, depending on your oven.

Cut off a slice... Mmmm.. Very tasty, Bon appetit!
