Biscuit

  • Egg - 4 pcs
  • Water (hot) - 2 tablespoon
  • Sugar (Small soluble, brown from "Mistral" or fructose) - 50 g
  • Wheat flour / Flour - 125 g
  • Dough leavening agent - 1 teaspoon

Filling

  • Jelly (for cake) - 1 unit.
  • Strawberry syrup (optional) - 2 tablespoon
  • Brown sugar (small soluble from "Mistral") - 2 tablespoon
  • Water - 250 ml

Stuffing

  • Strawberries - 400 g
  • Blueberries (optional) - 50 g

How to cook berry pie "77 calories" step by step with photos


Preheat oven at 180°C. Biscuit. Separate the whites from the yolks. First, briefly whip the yolks with sugar (universal brown sugar from "Mistral" - is very handy for making biscuits). In this recipe, sugar can be replaced by fructose, which is important for diabetics.

Add 2 tablespoon of hot water, continue beating yolks until white foam.

Measure, sift flour and mix with baking powder.

Gradually pour the flour (slow speed) into the whipped egg yolk mixture.

Separately, whip the whites with a pinch of salt until stiff peaks.

In small portions, gradually pour the whipped whites into the batter, using a spatula, in a circular motion

At the end, the dough will have a pulling consistency like this

Butter biscuit tin 24-26 cm with butter and dust with flour

Pour the batter into the tin

Bake in a preheated 180°C oven for about 25-30 minutes. (adjust according to your oven and the readiness of the biscuit) Check the biscuit's readiness with a splinter and... brown.

Turn the finished cake on a rack/board and let it cool. The cake is a little dense, so the berries and the filling will not let it get soggy.

Filling. Wash the strawberries, remove the stalks, and place them on a napkin. Blueberries - wash and dry on napkins from moisture. You can use different combinations of fruit and berries in this recipe: peach, kiwi, banana, currant, etc.

Halve dried strawberries, place them on the cake, then spread the blueberries.

Filling. Jelly should be made as described on the packaging: add sugar to water

Add some jelly beans, whisk with a whisk

Bring to the boil with stirring.

You can add berry syrup if you wish. Or mix the berry syrup with the water for the filling. Set the casserole aside for a few minutes

Pour slightly thickened jelly gradually over muffin and berries.

Let jelly set completely on berries and pie.
