You Haven't seen or tasted anything like this! Amazing tart with bright berry flavor, chocolate-hazelnut aroma and healthy curd filling. This pie is made with bird cherry flour, but you can substitute it with 40 g of wheat flour. Wheat flour, adding 2 tablespoon of cocoa. Any thick jam can be used, in my case it was blackcurrant jam so it would taste the same as bird cherry flour.

  • Wheat flour / Flour - 200 g
  • Bird cherry flour - 40 g
  • Butter (room temperature) - 70 g
  • Sour cream - 130 g
  • Sugar - 30 g
  • Salt - 1/2 teaspoon


  • Chicken egg - 2 pcs
  • Cheese cheese (2 - 9%) - 400 g
  • semolina - 1 tablepoon
  • Bird cherry flour - 1 tablespoon
  • Sour cream - 100 g
  • Jam - 6 tablespoon
  • Soda - 1/2 teaspoon

Protein layer

  • Walnuts (or almonds) - 1/2 glass
  • Dark Chocolate (or milk) - 70 g
  • Sugar - 2 tablespoon
  • Chicken egg - 2 units

How to cook berry mystery cottage cheese cake step by step with photos

Prepare the shortbread dough: ~ mix butter 70g. (soft, at room temperature), sour cream 130g., 30 g sugar. and salt. ~ add sifted flour (40 g of bird cherry. and 200 g of wheat.), mix.

The dough is elastic, easy to knead and does not stick to your hands. Place it in the fridge for half an hour.

The cottage cheese filling: ~ beat 4 egg whites until stiff peaks, ~ in another bowl mix: 4 egg yolks, 400g cottage cheese., sour cream 100 g., 3 tablespoon jam, 1 tablespoon semolina, 1 tablespoon bird cherry flour. Add the ingredients one by one. Add 0.5 teaspoon of baking soda as the last ingredient

~ Carefully add half of the beaten whites into the cottage cheese mixture (gradually, in several stages, stirring gently by hand), ~ put the rest of the beaten whites in the fridge.

Assembling the pie: ~ after half an hour, take the dough out of the refrigerator. Roll out a circle 4-5 cm larger in diameter than the diameter of the cake tin. Place the dough in the cake tin (preferably pie tin), form sides 2 cm high., ~ spread a thin layer of jam on the dough.

~ Pour cottage cheese filling on top of jam, ~ place in heated up to 180°C oven for about 30-40 minutes. Focus on the filling: it should harden a little.

Protein layer: ~ chop the chocolate (grate) and nuts (grate or beat with a blender to a nut paste, if there are large pieces left - no big deal), ~ Take the remaining whites out of the fridge, ~ beating whites with mixer, pour into them alternately in small portions 2 tablespoon sugar, chopped chocolate and nuts. Whisk again.

This is what walnuts look like, "pounded" with a blender. We could have chopped them up finely with a grater. The paste is not homogeneous, there are small pieces of nuts - leave it like that.

Take the form with the pie from the oven, quickly distribute the protein layer over it. Keep the cake in the oven, without lowering the temperature, for about 20 minutes more. After turning off the oven, leave the pie to cool (you can overnight).
