For me Easter is a family holiday, but not a quiet one, since the whole family gathers together, and the pies must be big for such gatherings. And this aromatic and tasty pie, with nuts and honey, always comes in handy.

Ingredients for a Big Sunny Hazelnut Pie:


Dough

  • Wheat flour / Flour (200ml each.) - 2 glass
  • Wholemeal Flour (200 ml each.) - 4 glass
  • Milk (approx.) - 500 ml
  • Butter - 100 g
  • Chicken Egg - 2 pcs
  • Yeast (dry, fast-acting) - 11 g
  • Sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • turmeric (for color, you can skip it.) - 1 teaspoon
  • Coriander - 2 teaspoon
  • Sesame (for cake decoration) - 1 tablespoon

Filling

  • Walnuts - 150 g
  • Hazelnuts - 150 g
  • Almonds - 150 g
  • Honey - 0.5 glass

Syrup

  • Sugar - 0,5 glass
  • Lemon juice - 3 tablespoon
  • Honey - 0.5 glass

How to cook large sunflower nut cake step by step with photos


Let's start with the filling. Prepare nuts and needed honey.

In a dry pan, toast the nuts. I have the hazelnuts roasted, so they are not in the pan. Then cool them down and chop with a knife.

Add honey and mix well.

Now let's make dough, we sift flour into a kneading bowl, add quick yeast and mix everything well.

We mix the butter, salt and sugar, warm it in the microwave or on the stove so it melts completely. Add 100 ml of milk, beat eggs and stir well. Then pour in the milk, for a total of 600 ml. liquids. Make a well in the flour and pour our liquid into it.

Knead, elastic dough not sticky to hands. You may need a little more flour, it depends on the quality. I think whole wheat flour absorbs more moisture than extra flour. Leave to rise in a warm place.

When risen spread out the dough on the table. The table can be dusted with flour so that the dough won't stick, or you can grease it with oil, as I did. We divide it into three not quite equal parts, one larger, one smaller and one middle. Preheat the oven to 180-200 degrees.

We take the most part of the dough and roll it out into a circle 2-3 cm larger in diameter than our pie (about 30-32cm), put it on baking parchment and put half of the stuffing in the center. Leave about 2 to 3cm to go. Then roll out a small piece the size of just to cover the filling. We put it on the pie and put the rest of the filling.

Roll out the last piece of dough, cover the filling with it, and wrap the loose edges of the first layer to the pie like a pigtail, making a polka dot pattern. Brush the surface with water and sprinkle with sesame seeds, make incisions in the top layer of dough up to the filling. Let stand in a warm place for 10 minutes then bake in the oven for 35-40 minutes

10 minutes before the pie is ready, start making syrup, in a saucepan mix sugar and lemon juice. Turn the heat on low until all the sugar has dissolved, remove from the heat, let the bubbles settle and pour in the honey. Stir well.

Take out browned ready pie and pour warm syrup all over the hot pie. Let the pie cool.
