We're not a small company, so I guess we can't do without pecan pie. So I prepared for you more Bread Cake - an interesting recipe - a cake with crumbled rye bread.

Ingredients for bread cake:

  • Chicken egg - 6 units
  • Egg yolk - 2 pcs
  • Sugar - 175 g
  • Vanilla sugar - 1 packet.
  • Bread crumb (from rye bread) - 125 g
  • Rum - 40 ml
  • Hazelnuts (ground) - 125 g
  • Wheat flour / Flour - 50 g
  • Choucats - 50 g
  • Spices (cinnamon 0,5 tsp.l., Cloves, anise and ground cardamom - on the tip of a knife)
  • Chocolate chips - 50 g
  • Cherries (canned, without syrup weight) - 350 g
  • Marzipan - 200 g
  • Dark Chocolate - 200 g

How to cook bread cake step by step with photos

I made the bread crumbs in advance: I dried the rye bread in the oven and ground it in a blender until it became crumbly. It's ok, but you have to cover the dishes on top so the crumbs don't fly around the kitchen :)

Don't be intimidated by the quantity of ingredients, they are all pretty much available.

If the cherries are frozen, you have to thaw them. If canned, strain it, drain the syrup, and dry it on a kitchen towel.

Now let's make the dough. Beat the eggs and 2 egg yolks with the sugar and vanilla sugar until lightly frothy.

Add bread crumbs and rum and mix with a mixer.

Add ground nuts and flour and mix with a mixer.

Add chocolate chips (grate chocolate), spices and candied fruits. Mix with a spoon. The dough is "puffing" like yeast dough :) Line the bottom of the cake pan with baking paper, butter the sides of the pan and sprinkle with bread crumbs. Spread out the dough in the form.

Turn oven on to 180°С. Spread dried cherries on the pastry. Put mould with dough in preheated oven.

Bake for 50 minutes at 180°C. In 20 minutes from the start of baking cover the form with aluminium foil on top, so that the top of the pie does not burn.

Let the ready pie cool completely. Put the marzipan (marzipan mass) on the baking paper, cover the top with another sheet of paper and roll out into a circle the size of the cake. Carefully transfer it to the paper and cover the top of the cake.

Melt the chocolate in a water bath. I added 1 tablespoon of milk and 1 tablespoon of butter to make the frosting not to get hard. You can make your own frosting if you like.

Pour the frosting on the cake and smooth it out. Let it set.

Then we decorate as we wish. I decorated with a grid of white vanilla icing and candied cherries.

Very interesting taste - a successful combination of bitter chocolate, juicy sour cherries, sweet candied fruits and crumbly structure of the cake.

Due to the juicy cherry which bursts when you bite into it, the tart doesn't seem dry. And note!, The pie is made without butter/margarine.
