  • Wheat flour / Flour - 500 g
  • Chicken egg - 1 pc
  • Sugar - 80 g
  • Vegetable oil - 80 ml
  • Yeast (10-12g) - 12 g
  • Lemon - 1 pc
  • Jam (apricot 4-5 spoonfuls) - 5 tablespoon
  • Apple - 1 pc
  • Dark Chocolate (in drops, walnuts in the original) - 2 handfuls.
  • Raisins - 2 handfuls.
  • Salt - 1/2 teaspoon

How to cook brioche with apples, raisins, chocolate step by step with photos

Crumble 12 grams of yeast into a bowl with warm milk and stir. I think it's more convenient to mix it in a little milk first (a couple of spoons). In a bowl beat an egg, add 80g of sugar and 80ml of vegetable oil. oil (you can substitute 100g of butter for the. butter)

Add the milk to the rest of the ingredients, stir together and add a third of the flour. Then add the zest of one lemon and half a teaspoon of salt and knead with a spatula.

Add flour in batches as long as we can knead it. When we have a dough that is still wet and more or less compact, put it on the table and knead with your hands.

The dough is soft and pleasant to work with. Dust the table with flour and try not to clog the dough with flour. It took me exactly 500 grams of flour, stated by the author. But everyone's flour is different-you may need more or less. The main thing is to gather the father-in-law into a ball. You don't have to work with it much. Put it in a bowl greased with butter, grease the top and cover with a towel and put it to sleep in the microwave. Before doing this I warm a large mug of water in it until hot, place the dough next to it and forget about it for an hour and a half. The dough should be doubled or tripled in size.

This is how wonderful and lively the dough is after an hour, it has doubled in size.

Prepare apples by slicing them thinly and drizzling with lemon juice.

Turn out the softened dough on a table and stretch it out with your hands. Then roll it out with a rolling pin until it is 1 cm thick. I have a rectangle with sides of 35 and 54 centimeters. In my opinion, if we reduce the width of the dough to 30 cm, it will be easier to work with.

On the rolled out layer of dough, apply apricot jam in three rows of 1-1.5 full spoonfuls, 4-5 cm from the edges. Place apples on the first row, nuts on the second (I have substituted chocolate drops) on the third - soaked and squeezed raisins.

Cover the first row with the dough, folding it. I continued wrapping in the same direction. The author came from the other side and covered the apples. And then folded them together. I did not pay attention to it, but it is probably a little more beautiful as a result.

The resulting roll into 12 pieces (you can divide it in half and again in half for convenience)

We put the rosettes in the form, smearing the paper with vegetable oil. oil. First the edges, then two in the middle. I have a 30 centimetre long pizza tin. I think a normal oven tray will work just as well. Or you could make two loaves and have two pies in the smaller pie tins, and cut them into 10 pieces. For a small family is a lot of dough. As an option, reduce the milk to 200 ml, which is my norm, respectively, 400 grams of flour. I put all this beauty on a well-known mug of hot water in a micro and left it for half an hour. At the end of half an hour I patted half of a beaten up egg (I had a stash) and sent it to the oven to bake for 30-40 minutes at 180 degrees Celsius., until crispy.

That's the beauty we have! The smell in the apartment is breathtaking, I had to share with the neighbors.

The dough is so tender, fluffy, sweet apple, chocolate... Mmm... It was a great day! The second day the dough was just as tender...
