Here's a recipe for cooked cabbage patties that I make. The recipe is simple and surprisingly delicious. The dough is suitable for both frying and baking. I do both, I like them fried, and my wife likes them baked.

Ingredients for cabbage patties:


  • Cabbage / Cabbage - 1 kg
  • Wheat flour / Flour - 940 g
  • Water - 300 ml
  • Onions (large) - 1 pc
  • Chicken egg (3 for stuffing, 1 for dough, 1 for coating) - 5 pcs
  • Mayonnaise - 180 g
  • Butter (50 stuffing, 30 frying) - 80 g
  • vegetable oil - 4 tablespoon
  • Yeast - 50 g
  • Salt - 8 g
  • Sugar - 50 g
  • Pepper mixture - to taste

How to cook cabbage patties step by step with photos


Here we go. We need the following products: 1. Cabbage - 1 kg. 2. flour - 940g. 3. Water - 300 g. 4. Onion - 1 piece large. 5. Egg - 5 piece 6. Mayonnaise - 180 gr. 7. Butter 80 gr. 8. Vegetable oil - 4 tablespoon 9. Yeast- 50g. 10. Salt- 8g. 11. Sugar - 50 gr. 12. Pepper mixture.

Let's begin with the dough, because the dough takes about two hours to rise. While it is heating, let's make stuffing. Let's dissolve the yeast in warm water, not hot, about 30-35.

To knead the dough I will use a planetary mixer, I bought a couple of months ago and immediately fell in love with it. It's so convenient. How did I live without it?? We start one egg.

Stir, then add salt. Then the sugar.

Stir and add 4 tablespoons of vegetable oil.

"Mayonnaise, which everyone says is bad, but deep down they love it.

♪ Stir it up, add water and yeast and dissolve it ♪.

Then we knead and add flour. We add it through a sieve three times with some kneading in between. We add flour.

Change the whisk to a hook.

And start kneading

Add flour and knead again.

Add the last part of flour and knead finally.

The dough is ready, it's quick and easy with this machine...

Shape it into a ball, you see how cozy it is.

We cover it with clingfilm.

And leave to rise in a warm place. It needs to rise twice, kneading each time. It'll take about an hour each time.

Here's the first time it's risen.

While the dough is rising, let's make the filling. We'll need a very simple set of ingredients. Cabbage, onion, egg and butter.

Cut the cabbage, we need 1 kilo.

Put it in the pot.

Fill it with boiling water so that it sinks completely.

Turn on the heat and wait for it to boil. Boil it for exactly 6 minutes.

After 6 minutes we put it on a colander and let it drain.

Squeeze it with a slotted skimmer.

Put it in a saucepan with 50 grams of butter. Stir while it's hot.

Salt it a little, not too much at all.

Add a teaspoon of sugar.

Pepper mixture. Not much, just a couple of turns of the mill.

Now we chop the onions.

And in a frying pan, fry it in butter, 30 grams of oil. And we don't fry it too much, until it's translucent. Until this color, don't overcook it.

And add it to the cabbage. Stir it thoroughly.

While the cabbage cools down, chop the eggs.

Wait for the cabbage to cool completely and add the egg.

Stir well. That's it, the stuffing is ready.

While we're preparing the stuffing the dough has risen for the second time.

Knead it and put it on the "operating" table...

We divide it into portions of 60 grams.

And proceed to molding. We mold the standard, or non-standard, as someone has a hand. I did not take a picture of the process of gaping, my hands were busy.

When the tray is ready, we cover it with a towel and leave it to proof. At the same time we turn on the oven for heating. Bake at 200 degrees for 15 to 20 minutes, depending on the power of the oven.

We take an egg yolk and some water and mix it. This will be a coating for the patties.

The oven is warm. Put a little egg yolk on the patties and put them in the preheated oven.

While one batch is baking, we'll take care of the fried patties. ♪ Pour in some vegetable oil, about five millimeters, and fry on a medium heat ♪.

The fryer temperature is just above "classic," 220 degrees. The classic is 160 to 175 degrees.

We stack the finished ones in a metal tray, it's beautiful...

Let's take a peek in the oven, they're done..

I`m telling if they are ready by color, if they`re like this it means they`re ready !. It's a real pleasure to the eye, and what a smell in the kitchen..

Cover the finished patties with a towel and leave for half an hour, so that the moisture is redistributed.
