Cake for Every Day! Pancake with raspberry jam and a layer of cottage cheese made with Oursson's Orsic starter and raspberry jam. I saved the whey from making the cottage cheese and baked the pancakes with it. The best whey pancakes for me. Moderately sweet, tasty, cottage cheese, this pie is great for dessert or just for tea.

Ingredients for Cheesecake and Jam Cake:

For the cottage cheese

  • Milk (selected) - 1 l
  • Starter (for Oursson cottage cheese) - 1 sachet.

For the dough

  • Whey (from making curd cheese) - 200 ml
  • Sugar - 4 tablespoon
  • Salt - 0.25 teaspoon
  • Soda - 0.75 teaspoon
  • Chicken egg - 2 pcs
  • Wheat flour / Flour - 150 g
  • Butter - 50 g

For the pie layer

  • Cheese cheese - 250 g
  • Jam (raspberry, 200 ml glass) - 0.5 glass

For decoration

  • Grapes (Or any fruit or berries for decoration)

How to cook curd and cheese cake step by step with photos

To make the cottage cheese I will use the selected milk and sourdough starter from Oursson and a special thermos of the same brand for making sourdough products with sourdough at home. Very convenient and you will always have fresh dairy products on the table. On the package is written in detail how to prepare such products. I usually make fermented dairy products overnight, including cottage cheese.

In the morning, we get a clot, which should be notched with a knife lengthwise and crosswise to the container at 1.5-2 cm, and then put it on a water bath at t-50-60 C directly in the same container. I used a tall ladle and put calico on the bottom under the container in 4 layers. Cook for 10-15 minutes to separate the whey.

The whey has to be filtered through gauze in several layers (I have 4 layers). I will save the whey and will not hang the gauze with the future cottage cheese. I will put a colander in a pan, line the colander with gauze, pour out the contents of the container with clotted cream and whey. Tie the edges of the gauze neatly.

The whey will drain into the pan. To make it happen faster, I put a ladle matching the D of a colander filled with water on the tied gauze bag with the future curd.

The cottage cheese is ready. It needs to be put in the fridge for 2 hours.

I poured the whey into a 0.5 liter jar.

I'll use the whey to make thick pancakes for pie. Prepare everything for the pancakes. Put sugar, salt and baking soda in the whey and mix together.

Melt butter in microwave for 55 seconds on high power of 800. Knead in the eggs and sift in the flour. Knead the dough.

Add butter to the dough and combine thoroughly with a whisk.

The dough is ready.

Bake pancakes D~ 15-17 cm. I poured 0.75 pansies, starting from the center. Use a pancake pan. Heat the pan. I did not grease it. Pour the batter. As soon as the batter begins to set and the bottom side is a beautiful color, we turn it. That's a thick, perforated pancake.

Turn it over and finish frying. With this amount of dough I had 5 pancakes ~1-1,3 cm thick.

I weighed the curd. On the scale, the weight of the cottage cheese. Net weight 250g. I will make a layer of cottage cheese and raspberry jam in the pie blender.

To assemble the pie. Brush a thick layer of cottage cheese and jam on each pancake. The pie layer does not spread at all.

Spread on top and sides of the pie. The pie is done.

I garnished it with seedless grapes. Let it stand for a while, soak and serve for tea.

The pancakes are spongy and thick, well absorbed by the layer of cottage cheese and jam. Just delicious!
