Ingredients for Caramel Apple Carob Cake:


Pie

  • Yeast (fast-acting "HAAS") - 4 g
  • Sugar - 1.5 tablespoon
  • Milk (warm) - 100 ml
  • Wheat flour / Flour - 2 tablespoon

Dough

  • Stuffing
  • Milk (warm) - 150 ml
  • Salt - 4 g
  • vegetable oil (+1 tsp.l. to grease the bowl) - 5 tablespoon
  • Wheat flour / Flour (- 2 tablespoon for sourdough from total) - 310 g

Filling

  • Apple (large, sour-sweet) - 3 pcs
  • Sugar - 3 tablespoon
  • Orange (2 tablespoon - juice and 1 tablespoon - zest) - 0.5 piece
  • Cheese curd (creamy) - 120 g
  • Cinnamon (20 g - "Cinnamon Sugar", "HAAS") - 0,5 sachet.
  • Butter (cold) - 20 g
  • Potato starch (+1-2 tablespoon of orange juice) - 1 teaspoon

Optional

  • Egg yolk (to grease the pie) - 1 pc
  • Sesame (roasted) - 1 tablespoon

How to cook caramel carob cake step by step with photos


Sift flour (310 g). 1. Prepare the sourdough. Mix 2 tbsp. spoonfuls of flour and yeast "HAAS" (1 teaspoon b/g).

2. Stir the sugar (1.5 tablespoon) in the warm milk (100 ml), then stir in the flour mixture. Cover the bowl with the lid and place in a warm place until a foamy cap forms, about 20 minutes.

3. Prepare the dough. Pour the foamy starter into a large bowl. Stir in the warm milk (150 ml), vegetable oil (5 tablespoon), salt (1 teaspoon w/w).

4. Into the liquid mixture, 1 tbsp. Spoon in remaining flour. Why 1 tbsp. spoon? Flour varies. The most important thing is for the dough to be soft, pliable and not sticky on your hands.

5. Gather dough into a ball. Grease a bowl with vegetable oil (1 teaspoon) and pour out the dough. Roll dough in oil. Cover the bowl with clingfilm to prevent the dough from getting chunky.

6. Put bowl in warm place to rise 2.5 times. "Warm place" - This can be heated to a minimum t 30 C oven or microwave (put a towel on the bottom of a heated microwave). You can put the bowl in warm water and maintain the temperature.

7. Prepare the filling. Peel three large sweet and sour apples from seeds and skin and finely dice them. Grate orange peel on a medium sized grater, we need 1 tablespoon of zest. Then squeeze 3 tablespoon of orange juice.

8. In a saucepan mix the orange juice (2 tablespoon) with the sugar (3 tablespoon) and the zest (1 tablespoon). Turn the orange mixture on the heat and simmer until the sugar has dissolved. Add cold butter (20g) to the mixture until melted.

9. Then add 0.5 grams of sugar "Cinnamon sugar" "HAAS" and mix.

10. Put chopped apples in the pan and caramelize them for 2-3 minutes. At this point, you can add to taste "Cinnamon sugar" "HAAS", adjust the taste. And to thicken the filling, mix 1 teaspoon of starch with 1-2 tablespoon of juice. Pour starch in a thin stream into a bowl and stir quickly, simmer for 1 minute and remove from the stove. The filling should be "thick" No liquid accumulation, apple slices in one piece.

11. Form the patties from the dough. Knead and divide the dough into 4 portions and shape into balls.

12. Roll out each ball to a circle of F=24cm. If there are small scraps left over put them under the cling film and shape them into a pie crust.

13. Divide each circle in half. In each half of the circle, mark (but do not cut) the middle. Grease the halves of the circle with cottage cheese.

14. Put the apple filling 1 tbsp. spoonfuls on each side of the circle halves.

15. Roll up the dough evenly on both sides of the half-circle, so that the two horns meet in the middle.

16. We have a piece with two horns. Proceed in the same way with the rest of the dough. If you have leftover scraps of dough, roll them out, twist them into a bundle, and decorate the middle of the pie.

17. Take a baking tin of F=26cm and line it with baking paper or a silicone pastry mat. Grease with cold butter. Arrange the pastry pieces in a circle. I buttered the silicone baking sheet as well.

18. Cover the tart mold with a light, dry towel or "rag", and send the pie to a warm place to rise twice. I turn on the oven to the lowest t of 40 C and my pie, in 20 minutes has doubled in size.

19. Then I change the oven to 180ºC, take the cake out and brush it with 1 egg yolk (1pc) mixed with milk (1 tablespoon). Sprinkle sesame seeds on a dry pan.

20. Bake pie until crispy, ~ 30-40 minutes. I sprinkle baked pie with water and cover with dry towel. Enjoy your tea time!
