This pie, I made for my beloved daughter. She is a big sweet tooth, and I tried to make a pie to her liking. I ended up with a very tasty pie, and the strawberries added a subtle sourness.

Ingredients for the strawberry pie:


For the sourdough

  • Milk - 60 ml
  • Yeast (dry quick-acting "Saf-moment") - 1 teaspoon
  • Sugar - 1 tablespoon

For the pastry

  • Egg (large) - 1 pc
  • Salt - 0.5 teaspoon
  • Yogurt (strawberry) - 60 g
  • Soda (extinguish in the yogurt) - 0,5 teaspoon
  • Wheat flour / Flour - 300 g
  • Butter (soft) - 50 g
  • Vanillin (on the tip of a knife)

For the caramel

  • Sugar - 100 g
  • Honey (I have buckwheat honey) - 1 tablespoon
  • Potato starch - 1 teaspoon

To complete the pie

  • Strawberries (frozen, small) - 400 g
  • Peach (canned, can be replaced by fresh favorite fruit) - 0,5 pc
  • Cinnamon (mixed with sugar 1:1) - 2 teaspoon
  • Peanut butter (chocolate, can be substituted for cinnamon) - 2 teaspoon
  • Egg yolk (whipped with 1 tablespoon of milk and a pint of sugar) - 1 unit

How to cook caramel strawberry pie step by step with photos


1. Prepare sourdough. Dissolve yeast in milk, add sugar and 2 tablespoon of flour and mix. Leave in warm place until a "cap" (~15-20 min).

2. Prepare dough. Quench baking soda in yogurt. With all remaining ingredients for the dough; 1 egg, 0.5 teaspoon salt, sifted flour (300g), soft butter + marshmallow, vanilla, knead the dough. Grease a bowl with oil, put the dough, put a towel over it and leave in a warm place to rise. Add flour little by little. You may need a little more or less flour. The dough is soft and does not stick to your hands.

3. Prepare a baking tin (tin 21-23 cm). Layer it with baking paper (cut out a circle) and grease it with butter.

4. Knead the dough until risen and divide it into 5 portions.

5. Roll two pieces of dough into a ball, then roll out the dough, cut out a circle 3 cm larger than the diameter of the mold. To make it easier to cut out a circle: take the cut out circle from the mold paper, put it on the sheet of rolled out dough. Cut out a circle 3 centimeters bigger, then put it into the tray together with the paper. Then put a rim on the edge of the tray, about 2 to 3 cm high.

6. Sprinkle the pastry with the starch. Spread the frozen strawberries in a circle. In the middle of the circle, I put a peach. Carefully, without cutting the dough, cut the peach into slices.

7. Let's make the caramel. Mix sugar with honey and 1 tablespoon of juice or water. Bring mixture to a boil and hold until sugar dissolves, stirring occasionally. Bring it to a boil for a few seconds, then take it off the heat,

8. and pour the strawberries on top, in a circular motion. Pouring with a tablespoon, so that all the strawberries on top, are covered with caramel.

9. From the remaining 3 pieces of dough (separately), roll out the layer, cut out 3 circles. Grease 2 circles with vegetable oil and sprinkle with cinnamon and sugar (1:1).

10. Put a third clean circle on top of 2 circles and cut out 8 segments. Then cut in the middle of each one with a knife until it is incomplete.

11. Shape leaves from each segment. We have 8 pieces.

12. Then put these sheets into a mold and mold them in a circle. Roll out scraps of pastry into long flapjacks (20*4 sm), put peanut butter, make a roll and cut into rolls (7 mm thick). 7 mm) and decorate the middle of the pie.

14. Put the tray with the cake in the oven and turn on the temperature to 40 °C. Let the cake double in size (20-30 minutes). Then brush the cake with whipped egg yolk, switch the oven to 190°C and bake it for 20-30 minutes. Sprinkle the ready pie with water or brush with melted butter, cover with a towel and let it cool. Then invert it onto a dish. The warm caramel may come out with the pie, so take a bigger dish. Decorate the cake with powdered sugar and mint leaves. Enjoy!!
