I made these amazing cheesecake cakes for Trinity with two fillings. The unsweetened ones with cabbage and chicken fillet, and the sweet ones with cherries and seeds. Our whole family loves these pastries. This is something special, it tastes unsweetened and unsalted, shortbread, but not shortbread. In general, who is familiar with this kind of dough, you know. If you haven't tried it, you should definitely make this pastry and taste it. These pastries are delicious with both sweet and savory fillings. This dough can be used to make pies, which I suggest, you can also make a tart or any closed pie, with berries and fruit, or with meat, mushrooms, egg and herbs... etc. д. Ingredients for Cheese Dough Patties:


Dough

  • Salt - 1/4 teaspoon
  • Butter - 150 g
  • Wheat flour / Flour - 260 g
  • Water (ice water) - 5 tablespoon
  • Hard Cheese (I have Gouda) - 120 g

Unsweetened stuffing

  • Red onion (onions) - 1 pc
  • Chicken fillet - 200 g
  • White Cabbage / Cabbage (small) - 1/2 fork
  • Salt (to taste)
  • Black pepper (to taste)
  • Dill - 1 bunch.
  • Chicken egg - 1 pc

Sweet stuffing

  • Cherry (pitted) - 150 g
  • Sugar (to taste)
  • Sunflower seeds (to taste)

Sprinkles

  • Sesame (white, black)
  • Chicken egg (to grease the patties)
  • Sunflower seeds

How to cook cheesecake patties step by step with photos


Sift the flour and salt into a bowl. Dice the butter from the refrigerator. Grate cheese on a fine grater. Chill the water in the freezer. Combine flour, cheese and butter.

Grind the mixture into crumbs with your hands. Add cold water and form dough into a ball. Wrap in clingfilm and place in fridge for an hour.

Let's make the stuffing. Peel an onion. Finely dice chicken filet. Put the meat and onions to fry in vegetable oil. Shred the cabbage and add it to the meat. Season with salt and pepper to taste. Put ready stuffing in a bowl to cool.

Slice a nice bunch of fresh dill. Add them to the cold stuffing. Stir. Add egg and mix again. The filling is ready.

Roll out cooled pastry 3-5 mm thick. Cut out circles 8-10 cm in diameter. Spoon the filling into the center of the circle and glue the pie, I also used a fork to go around the edges. Place the patties on a baking tray lined with baking paper. Glaze the patties with whisked egg and sprinkle with sesame seeds (if desired). Bake in a preheated 180 degrees oven for about 30 minutes until golden brown (watch the oven).

We had a lot of cabbage stuffing, so we only had 4 cherry pies left, one for each member of the family. Place peeled cherries in the center, sprinkle with sugar and add seeds/nuts (or without). Next, repeat the gluing procedure, brush with egg, sprinkle with seeds and a little sugar. Bake until done. Bon appetit!!!
