This pie could be called "A quick khachapuri" - It's just as cheesy and filling. But it is only fast if you have a ready made phyllo pastry. If you do not have such dough, then let's make it.   • Wheat Flour / Flour - 500 g
  • Water - 300 ml
  • Salt - 1 teaspoon
  • Butter - 100-150 g
  • Hard cheese ("Adygeyan" - 250 g, "Russian" - 250 g) - 500 g
  • Sesame (seeds) - 2-3 tablespoon
  • Vegetable oil - 5 tablespoon

How to cook cheese pie step by step with photos


Pour flour on work surface and shape into well.

Mix the warm water, salt, and vegetable oil.

Then we pour the butter liquid part by part into the "well", And with our fingers, picking up the flour from the middle to the edges, knead the dough. It is best not to put all the flour on the work surface, since it would be a shame to start kneading.к. flour varies in quality, and its quantity may be slightly different from that specified in the recipe.

The ready dough should be soft and tender, but it should not stick to your hands.

Now you need to lightly "beat up slightly" Take the dough in your hand and slap it a few times on the table.

Then wrap the dough in clingfilm and place it in the fridge for 1 hour.

Remove the dough from the fridge and divide it into 14 pieces. Cover the work surface with a cloth and dust with flour. Roll out each piece of dough with a rolling pin as thin as possible. Put the remaining pieces of dough in a sachet (with a little flour, otherwise they will stick together), or cover the top with a plate.

Then gently pull the rolled out piece of dough with your hands at the edges. You can just hang the dough from the table, and it will stretch under its own weight, you only need to help it slightly with your hands.

When the edges are stretched out, move the dough to the back of your hands and gently pull it out.

If such tricks scare you, you can gently stretch the dough with one hand and gently help with the other by turning the dough.

The dough stretches well and you can experiment with different ways to stretch it.

Try to stretch the dough as thinly as possible. Of course, you can't do without rips, but it's a matter of practice.

While we are pulling out the first layer of dough, we put butter on the fire and melt it.

For the filling we grate the cheeses. If desired, you can add your favorite spices. I add ground paprika.

Form the dough into a square, about 35x35 cm. I made a small mistake and folded the layers of dough on the table. The rolled out sheets should have been placed immediately on the tray. Though I had no problem in transferring the ready pie to the tray. It is desirable that the edges of the dough extend beyond the border of the baking tray, because the edges, which usually do not stretch all the way, can be thick, and we will cut them. Grease the rolled out layer with melted butter.

Then spread a layer of cheese. Do the same with all the rolled out layers. It is better to make two 7-layer pies, because the pie may not hold together.

Now cut the edges of the pastry, at the same time shaping the pastry into a square.

Now start folding the pie into an envelope. First like this,

and then like this. The cut pieces can be put inside the cake, thus masking any imperfections that may have formed.

Sprinkle the top of the pie with grated cheese and sesame seeds.

Bake in a preheated 200 degree oven for 30-40 minutes.

If the pie starts to turn red on top too soon, cover it with foil or parchment.

Now let's cool the pie down a bit and cut it up.

I made the pie for all 14 layers, and it was a little undercooked. But that didn't upset us one bit. My husband said that hot food is never raw, so he ate about half of the pie at once.
