Spinach combined with feta cheese and olive oil is a must for kids and seniors and must be eaten at least once a week to strengthen bones and reduce the risk of fractures. Traditional Greek cake with an original slightly salty, cheesy flavor. Here is my variant with yeast dough)))

Ingredients for the cheese and spinach pie:


Dough

  • Wheat flour / Flour (maybe a little more) - 600 g
  • Yeast (dry, if fresh - 30 grams) - 10 g
  • Milk (warm) - 1 glass
  • Chicken egg - 2 pcs
  • Honey - 1 teaspoon
  • Salt - 1 teaspoon
  • Sugar - 2 teaspoon
  • Vinegar - 1 tablespoon
  • Sour cream - 150 ml

Filling

  • Cheese cheese (rubbed through a sieve) - 400 g
  • Feta - 100 g
  • Spinach (frozen, or fresh if you can find it) - 100 g
  • Chicken egg - 2 pcs
  • Salt (to taste) - 1 teaspoon

Grease and sprinkles

  • Sesame (for sprinkles ) - 1 tablespoon
  • Eggs (for grease ) - 1 pc

How to cook cheese spinach pie step by step with photos


Prepare the ingredients: Sift the flour, rub the cottage cheese through a sieve, heat the milk, defrost the spinach and squeeze out the liquid.

Stir honey and yeast in warm milk. Let it sit for 10 minutes to activate the yeast.

Then beat eggs, add salt, sugar, vinegar and sour cream. Stir well.

Pour in sifted flour and knead into elastic dough.

Leave it in a warm place for an hour. If there is no such place can be left in a pan with warm water, it should double in size.

Now for the filling, it's easy. With a blender, we beat until smooth cottage cheese, shredded cheese, feta cheese, spinach and eggs. Taste and salt to taste. The feta is salty, but we have to salt it, because it doesn't feel so salty in the ready pie.

You will have such a mass.

Knead the dough, divide it into two parts and roll it up. Using any round shape, cut out two equal circles. Do not throw out the trimmings, we will need them.

Lay one of the circles on a pan dusted with flour.

Spread the stuffing on it as on the photo.

Cover the second circle on top, press the middle with any container of suitable size and use a fork to press the edges together so that the two circles will stick together and the dough won't fall apart when baked.

Make incisions with a knife to form "Petals" and turn them out as in the photo, stuffed side up.

That's how you get it.

Glaze with egg and sprinkle with sesame seeds. Put in oven for 35-40 minutes. at 180 C.

I made the same pie from scraps but in another form. There is a little of filling left over. Zero waste production))) Roll out the pastry and cut out strips three fingers thick. Spread stuffing on them.

Pinch the pastry and turn it seam side down.

Turn out onto a lightly floured baking sheet in a snail pattern. Brush with egg and sprinkle with sesame seeds and put in the oven with the first cake for about 25-30 minutes. Depending on your oven.

We have such a handsome pie)))) Crusty, hot and fragrant))))
