Here is another Romanian dish, this time it is a pastry. I found this recipe in a magazine "Cook it", I decided to try it out, and I really liked the pie, I hope someone from the cooks will like it. On this site there are more than 100 recipes for curd cakes, I ran my eyes over everything, maybe I missed a recipe like this, I'll delete it if you tell me.

Ingredients for cottage cheese pie:

  • Wheat Flour / Flour (plus flour for rolling) - 350 g
  • Milk - 1/3 glass
  • Butter - 85 g
  • Chicken egg (1 - for dough, 2 - for stuffing, a little for greasing the forms) - 3 pcs
  • Egg yolk - 1 pc
  • Sugar (6 tbsp.l - for the dough; 3 tbsp.l. - in the filling) - 9 tablespoon
  • Dough leavening agent - 2 teaspoon
  • Vanilla (2 pips: one for the dough and one for the filling)
  • Salt (on the tip of a knife)
  • Cheese cheese (I have 18% fat, but you can have any type) - 500 g
  • semolina - 2 tablespoon
  • Orange (zest from it) - 1 pc
  • Raisins - 100 g
  • Nuts (walnut and cashew mix) - 50 g
  • Powdered sugar (for sprinkles)

In this picture, everything for the filling. Raisins, of course, thoroughly rinse, and dried nuts in the microwave, or in a pan, or in the oven, whichever is convenient.

Remove the zest from the orange, and grind the nuts.

For the dough, I pour the milk into a saucepan (bowl), add 6 tbsp. I bring it to a boil, stirring constantly, until the sugar crystals dissolve. I cool it down a little, then dissolve the butter, chopped into pieces, in the milk and sugar. Р.S. My first attempt was, as written in the original, to dissolve both sugar and butter in the milk at the same time, the butter gave flakes (probably the quality was poor), I had to repeat, changing the procedure a bit.

I added the egg to the warm milk mixture, stirred until smooth.

Then I poured the baking powder and mixed it quickly.

The final result is this kind of milk mixture.

I sifted the flour and salt, poured the milk mixture, added a pinch of vanilla and kneaded a smooth dough (if the dough is very sticky to the hands, add a little flour, knead without fanaticism).

For the filling I strained the cottage cheese through a sieve (do not spare time for this, the cottage cheese after rubbing is airy and homogeneous).

I added to the cottage cheese all the stuffing: eggs, sugar, semolina, raisins, nuts, zest, vanillin.

I thoroughly mixed everything, let it stand for about 15 minutes (let the ingredients "get used to" to each other).

The dough was divided into two parts, one part was rolled out a couple of centimeters larger than the diameter of the mould (I had D 24 cm, but you can roll it out to D 26 cm), put it in a greased mould and make the rims. You can roll out the pastry on a table or on a sheet of baking paper, put it into a form (it is convenient for rectangular and square forms).

Spread the filling evenly over the entire mold.

The second part of the dough, like the first, I roll out into a circle and put it on the filling. Gently press around the edges. I pierce the pie with a fork and brush it with egg yolk. I cut out a circle on a template - a suitable size plate. Forgive me, but I can't find all the pictures of the dough rolling "I don't know where".

I baked the cake for 30 - 35 minutes until it formed a crust at 180 degrees (preheat the oven). I cooled it down before serving, and sprinkled with powdered sugar. It turned out pretty good.
