Have you ever been in Lviv?? If so, you know exactly the smell of Lviv's cozy coffee houses (kavyaren) with their unforgettable pastries. Here's one of these Lviv wonders - the most delicate curd pie with airy consistency and a subtle lemon flavor. To tell you the truth, it's not an express recipe, and it took some time and effort. But I was very pleased with the result! I'm sure this dish can't leave you indifferent.

Ingredients for cheesecake "Lvivsky":


  • Butter (70g in the dough + 50g in the curd mass) - 120 g
  • Sour cream - 70 g
  • Chicken egg (1 in the dough + 6 in the curd mass) - 7 pcs
  • Lemon - 1 pc
  • Cheese - 1 kg
  • Sugar (1.5 cup in the curd mass + 2 tablespoon in the dough + 2 tablespoon in the poppy seed filling) - 2 glass
  • Cocoa powder - 1 tablespoon
  • Baking powder (1 teaspoon in batter + 2 teaspoon in curd mixture) - 3 teaspoon
  • Poppy seeds - 100 g
  • Wheat flour / Flour - 220 g
  • Starch - 4-5 tablespoon
  • Vanillin
  • Milk - 3 tablespoon
  • Milk Chocolate / Chocolate - 100 g

The described amount of ingredients makes a big cake. I even got 2 - one for a standard cupcake tin and a smaller one. You can divide the ingredients in half and make a medium sized pie. It is important to choose good cottage cheese, so it would not be too dry or too wet. It is best to buy homemade, low-fat curd with a smooth consistency. First we need to crush the poppy seeds. To do this we pour boiling water over it and leave it to stand for about 20 minutes. Then we gently drain the water and grind the poppy seeds in a mortar or blender. To the ground poppy add 2 tbsp. tablespoons of sugar.

Then we need to prepare the shortbread base for the pie. For this purpose mix butter (70g), sour cream, flour, 2-3 tablespoons of sugar, 1 egg, cocoa and 1 tsp. 1 tsp of baking powder. Knead together a light, unctuous dough that is even a little sticky on the hands and place it in the refrigerator to cool.

To prepare the curd mass we use a blender to blend the curd with the yolks and melted butter, leaving no crumbles. It should form a homogeneous mass. Then add the starch, lemon zest and juice, 1 cup sugar, vanilla, 2 teaspoon of baking powder and mix everything well. Beat egg whites and 0.5 cup sugar separately and add them to the curd mass, leaving 2 tablespoon for the poppy seeds filling. Gently fold in the egg whites.

Add the remaining 2 tablespoon of whipped egg whites to the poppy filling.

Then form . Take a large cake pan, preferably with removable sides, lay a double layer of parchment paper (then the pan does not need to be greased). Spread a layer of dough on the bottom, smoothing it out with a hand soaked in water. The layer of dough should not exceed 1 cm. Pour half of the cottage cheese mixture on it. Then spread the poppy seed filling in the center. Then pour out the other half of the curd filling, starting on the edges, so that the poppy seeds don't run down the sides.

Put the cheesecake in a preheated 180 degrees oven. And then it all depends on the oven. My gas oven, usually it has a bottom fire, and the top is poorly baked, so I put an extra tray on the bottom shelf. Bake for about 1.5 hours.

Bake until crispy on top. Check if it is ready with a stick of wood.

While the cake is cooling, we need to make the chocolate glaze. To do this, over a very low heat, melt chocolate with a little milk. Glaze on top.
