I know, there are a lot of recipes for yeast dough, and every hostess has her own favorite, the best. I want to share one of my crepe dough recipes. It's egg-free, but not lean! Tender, light, airy, and very pleasant to work with. It's especially good for beginners! The patties have thin dough with lots of delicious, juicy filling that doesn't leak. And on top (optional) sweet, sugar streusel crumbs. Join!

Ingredients for cherry pies:


For the dough

  • Milk - 160 g
  • Wheat flour / Flour - 300 g
  • Sugar - 45 g
  • Butter - 60 g
  • Salt - 4 g
  • Yeast - 6 g

For the filling

  • Cherries - 480 g
  • Sugar - 70 g
  • Corn starch - 20 g
  • Vanillin - 1 pinch.

For the streusel

  • Butter - 50 g
  • Wheat flour / Flour - 75 g
  • Sugar - 75 g
  • Salt - 1 pinch.
  • Vanillin - 1 pinch.

Extras

  • Chicken egg - 1 pc

How to cook cherry pies step by step with photos


The ingredients you need: Sifted flour. Warm milk. Dry yeast. Sugar, salt. Melted butter.

I dissolve yeast and a couple teaspoons of sugar in warm milk. Stir and leave for 10 minutes to "wake up" the yeast.

A "foamy" cap should form on top.

Melt the butter, let it cool. It shouldn't be hot!

In a bowl, combine the milk and yeast, the melted, cooled butter! the melted butter, the remaining sugar, salt and 2/3 of the flour. Knead the dough at minimum speed (or with my hands).

Gradually add the remaining flour. It took me 7-8 minutes to knead the dough. The dough will form a clump and will be soft, smooth, homogeneous, and not sticky!

I place the dough in a container greased with vegetable oil, cover with clingfilm and place it in a warm, draught-free place for 1.5-2 hours. The dough should rise and double in size.

For the streusel you will need: Cold butter. Salt, sugar, vanilla and flour.

Combine everything, rubbing into a crumb with your hands. Done! Put it in the fridge. I must tell you right away that these are enough crumbs for a double portion. Or make a half portion of the crumb at once, or, as I did, cover it with clingfilm and keep it in the fridge or freezer. We really love it.

For the filling we will need: Berries, I have a defrosted cherry, seedless. You can use any kind, as well as frozen or fresh. Corn starch. Salt, sugar. Vanilla. It would also be very tasty if flavored with cinnamon or nutmeg.

I put the frozen cherries on a sieve to let the juice run off. I got a 200g glass of kolo. I made a compote out of it:)

In a saucepan, I pour the cherries over the starch, sugar, vanilla, stir...

... and bring to a boil over medium heat (stirring constantly). The mass will be thick and glossy! Remove from heat, let cool!

I put my arms around the risen dough...

... Divide it into 10 equal parts of 55-57g. each piece. Round it, cover it with clingfilm.

Roll out the dough into a small oval, put 2.5-3 teaspoon of filling and carefully pinch the edges. Do not dust the rolled out dough with flour so much, it will stick together better. It is also important that the juice does not get into the seam, otherwise the patties will separate during baking. If your hands are sticky to the dough, lightly dust (your hands) with flour.

I pinch the seams well and lay them on the baking tray with the seam side down.

There may be 50-80 grams of stuffing left over!

I put it on a baking tray, cover with a towel and leave it for 20-25 minutes.

Then I brush with beaten egg, sprinkle with streusel and send to pre-heated oven up to 170 degrees for 30 minutes.

The patties are well browned!

I let it cool on the rack!

Finished!

The hardest part is waiting for them to cool! And the aromas in the kitchen.... magical! Enjoy your tea!
