Ingredients for the snack pie with chicken and apple:

  • Chicken shank - 6 units
  • Potatoes (small tuber) - 1 pc
  • Onion (small head) - 1 pc
  • Garlic - 1 clove
  • Chicken egg - 1 pc
  • Seasoning (for chicken) - 1 teaspoon
  • Wheat flour / Flour (for dusting) - 1 tablespoon
  • Bread crumbs / Breading - 2 tablespoon
  • Vegetable oil - 2 tablespoon
  • Puff pastry (2 plates) - 500 g
  • butter - 30 g
  • Ketchup (tomato) - 2 tablespoon
  • Sour cream - 3 tablespoon
  • Apple - 1 pc
  • Black pepper - 1 pinch.
  • Salt - to taste

How to cook chicken and apple snack pie step by step with photos

1. Wash shanks of chicken and pat dry with paper towel. Carefully separate the skin and cut off the flesh.

2. Use a pair of secateurs to cut off the bone and leave the tip of the shank. If you do not have secateurs we can use your husband's wire cutters to cut the pips.

3. You can make a nice soup out of the bones.

4. Prepare stuffing for the legs. Peel 1 potato and 1 onion and cut into large wedges. Mix flesh of chicken with potatoes, onion and pressed garlic 1 clove. Add (1 tablespoon) egg albumen beaten with fork, seasoning, salt and pepper.

5. Chop up the mixture in a meat grinder or blender. I used a GALAXY GL2300 food processor.

6. Stuff the legs with the minced meat. This is convenient to do if the shank skin is put on a small shot glass.

7. Dip the shank, only where minced meat is visible, first into flour, then into the salted rest of protein and into breadcrumbs. Т. е. breading only the part of the leg where you can see the minced meat. Fry the legs until crispy in hot oil. It is not necessary to fry them until they are completely cooked.

8. Cut 2 sheets of dough into 8 pieces.

9. Roll out two pieces of dough into a circle. 6 pieces (squares) of dough remain.

10. Line the tin (F=26 cm) with baking paper or foil and shape the pastry circle with a rolling pin. Cut out a circle in the middle, the same size as the diameter of the glass. Brush the circle with melted butter and prick it with a fork.

11. Roll out six pieces of dough into a sheet and increase in size by 1.5 or 2 times. Prick the pastry with a fork and place a small piece of butter.

12. Mix tomato ketchup (2 tablespoons, spicy is better) with sour cream (2 tablespoons) and pinch of salt. Shape into 6 rolls, one piece of dough longer than the other. Brush with sour cream mixture and place stuffed shank.

13. Cover the shank of chicken with the pastry, wrap the end with foil and turn it upside down.

14. Place in the tin in a circle and pierce the top with a fork.

15. Slice an apple (without seeds) and fill the spaces between the patties. Brush the top of patties and apple slices (only the cut) with sour cream (1-2 tablespoon). Sour cream low fat (10%) is most desired.

16. Let's send the pie to the oven heated up to 40 C. After 15 minutes this fluffy, enlarged pie. And do NOT grease the pie anymore, the dough is very tender! Pop the pie in a preheated 180 C oven until crusty, ~30 minutes.

16. When the pie is browned, take it out and brush it with some egg yolk whipped with pinch of salt. If the yolk is very bright, add 1 tablespoon of milk. The pie is ready, so beautiful, hearty, and what a beautiful mincemeat in the cut! Enjoy your meal!
