This pie is delicious, flavorful, juicy and has crispy sides. Best of all, it's quick and easy, even a child can make it! There's no need to fuss with the dough, roll something out, worry if the cake will bake.. We have a bread-based pie with a classic favorite filling - chicken, mushrooms and cheese. Also, it is a very tasty and successful way to dispose of stale bread.

Ingredients for chicken and mushroom pie "couldn't be simpler":


  • Chicken fillet (large piece) - 1 pc
  • Champignons - 200 g
  • Tomato (I have small tomatoes) - 5 pcs
  • Onions - 1 pc
  • Garlic - 2 clove
  • Soy sauce - 3 tablespoon
  • Vinegar (I have a rice one) - 1 tablespoon
  • Starch - 2 teaspoon
  • Cream (I had 15%, you can substitute with sour cream) - 100 ml
  • Chicken egg (you can 1 piece) - 2 pieces
  • Hard cheese - 150 g
  • Baton (half a loaf can be taken) - 1 pc

Cut the loaf into cubes. There is no need to remove the crust from the loaf. It is best to line a spring form with baking paper and lightly grease the sides with olive oil. The size of my dish is 24 cm in diameter. So, we put two thirds of the whole loaf on the bottom. Set aside for now and fill.

Skim tomatoes. Cut into big slices. Slice mushrooms in the same way.

Cut chicken fillet into small pieces. Add chopped onion, minced garlic, spices, soy sauce and vinegar. Stir. Then add the starch and stir again. We need starch to prevent the liquid filling from floating in the pie.

Turn down low heat on stove to medium. Using butter, fry chicken for about 2 minutes, no more.

Add mushrooms, fry for another minute.

At the end - the tomatoes together with the juice, which they gave. Roast for 2-3 minutes more. The starch we added to the chicken will thicken the tomato juice a bit. Turn off heat.

Mix egg+cream with salt and beat with mixer for a minute.

Now it's time to layer the pie! Put two-thirds of the mushroom, chicken and tomato filling on the cubes of loaf, which we have already laid out a long time ago.

Grated cheese.

Leftover slices of loaf. We have one third of them, no more! After baking, the bottom layer of the loaf will be soft, like the dough, but these slices will be crispy!

And the rest of the filling. We stack it between the slices of loaf. Sprinkle it with grated cheese. Pour the whole thing with the egg and butter mixture and send it to the oven heated to 200 degrees for about 20-25 minutes (be guided by your own). During this time, the filling should set and the slices of loaf on top and on the sides should get a nice crunch.

Our cake is ready! I did not even have time to take a picture of the whole pie. This is the only photo I miraculously managed to snap. My ogloids swooped down like kites, chased me and my camera away from the pie and ate it in one sitting. Very tasty! It cuts well, it doesn't fall apart.
