We have a great mushroom crop this year. And since I live on the outskirts of the village, near our abandoned military unit, it only takes me 2 minutes to get the mushrooms. There are a lot of aspen trees planted by my husband 11 years ago, when this part still existed. The trees have already grown and there are a lot of aspen mushrooms under them. These mushrooms, I made a pie. This pie is versatile, it can be eaten with any meal, instead of bread and as a separate dish. Delicious both hot and cold. Can be taken on a picnic or as a snack for work or school.

Ingredients for the filled pie with chicken and mushrooms:


  • Milk (preferably melted) - 1000 ml
  • Sourdough starter (for OURSSON ryazhenka) - 1 sachet.


  • Ryazhenka - 300 ml
  • Wheat flour / Flour - 300 g
  • Chicken egg - 2 pcs
  • Dough leavening agent - 1 teaspoon
  • Mushrooms - 200 g
  • Onions - 1 unit
  • Chicken (boiled) - 200 g
  • Garlic - 2 clove
  • Salt - to taste
  • Sugar - 1 teaspoon
  • Sesame - 2 tablespoon
  • Vegetable oil - 2 tablespoon
  • Greens (dry or fresh) - to taste
  • Hot red pepper - 1/4 teaspoon

How to cook chicken and mushroom step by step with photos

Making ryazhenka with OURSSON starter. One sourdough starter is enough for 1 liter of milk. It is better to use melted milk. It is convenient to use special thermos for making sourdough starter OURSSON. Take pasteurized milk, I have 2.5%, add sourdough. Stir thoroughly with a clean dry spoon after adding sourdough starter for 2-3 minutes until the starter has completely dissolved. You can simply shake the closed beaker of liquid vigorously. Put a glass in a thermos, pour boiling water up to the mark and leave in a warm place for 6-10 hours, I did overnight. Put ready ryazhenka in the fridge, and use it when necessary.

I suggest making a delicious and flavorful flood pie from the obtained ryazhenka. We'll take mushrooms, preferably wild mushrooms, but in the absence of them we can also take champignons. You can take any mushrooms: fresh, boiled, frozen. I have pre-cooked and frozen aspen mushrooms. Put the mushrooms in a pan, evaporate the liquid, add vegetable oil and fry for about 10 minutes.

Add finely chopped onion and garlic, stir to combine. Roast for 2 minutes.

Add boiled chicken fillets, mix together.

Season with salt, dry or fresh herbs, red hot pepper. Stir. Set stuffing aside to cool.

Making the dough. In a bowl for beating, put the eggs, salt, sugar, lightly beat.

Add prepared ryazhenka and mix.

Add flour sifted with baking powder. Stir with a spatula. The dough should be about as thick as pancake batter.

Take a convenient mold. Grease with butter as needed. Pour half of the dough.

Put the cooled filling in the middle.

Fill with remaining batter. Sprinkle with sesame seeds, I have a black one. We put in oven heated up to 200 degrees, bake until browned and ready about 40 minutes.

Take out the finished pie.

Serve the cake hot or cold. Bon appetit!
