Ingredients for chicken, ham and broccoli pie:


Dough

  • Wheat flour / Flour - 350 g
  • Yeast (SAF-Moment) - 1.5 teaspoon
  • Butter - 45 g
  • Sugar - 2 teaspoon
  • Salt - 1 teaspoon
  • Egg yolk (+1 tbsp.l. milk to grease the surface of the cake) - 1 pc
  • Sesame (for sprinkles)
  • Turmeric - 1 teaspoon
  • Milk - 225 ml

Stuffing

  • Broccoli (frozen) - 300 g
  • Ham - 150 g
  • Chicken breast (boiled) - 200 g
  • Hard cheese - 150 g
  • Egg white - 1 pc
  • Mustard (grainy) - 1 tablepoon
  • Spices (salt, ground pepper to taste)

How to cook chicken, ham and broccoli pie step by step with photos


Heat the milk to 38°C, add the sugar and SAF-Moment yeast, stir well and leave to rise until a foamy cap appears

Sift flour with salt and turmeric into a bowl, pour in the milk-juice mixture and melted butter, and knead the dough. The dough will be soft and not sticky to your hands. Cover the bowl with a towel and leave it in a warm place to rise for an hour. The dough should double in size. I usually put it in the oven with a light on. There are no drafts in the oven and the heat from the light bulb is enough to evenly raise the dough. If you don't have a light bulb, turn on the oven for 3-5 minutes to let the walls heat up slightly, turn off the heat, check with the palm of your hand to see if the air inside is too hot and only then put the dough to rise.

While the dough is rising, prepare the filling. Boil broccoli for 4-5 minutes in boiling salted water, remove it in a colander, drain, then cut it into small florets. The broccoli should stay a little crispy, don't overcook it!

Finely dice boiled or baked chicken breast and ham. I didn't have much ham, so I added some smoked sausage.

Mix the chicken, ham and broccoli in a bowl. Separate the egg yolk from the egg white. Leave the egg yolk to grease the surface of the pie, and whisk the egg white with a spoonful of grainy mustard and grated cheese. Add the egg and cheese mixture to the rest of the filling, season with salt and pepper and stir to combine. The stuffing is ready.

Meanwhile the dough has risen. Dip your finger in the flour and make a hole in the surface of the dough. If it starts to tighten right away, then the dough needs to stand still, but if the well hardly changes its shape within 5 minutes, then the dough has already risen. Dust the board with flour and knead the dough. Roll out the rectangle, put the filling in the center, make oblique cuts as on the photo and braid. Put the pie on a baking tray and cover with a towel. Allow to proof for 20 minutes. Preheat oven to 180C. Mix egg yolk with a tablespoon of milk and grease the pie surface, sprinkle with sesame seeds. Bake for 30 minutes until golden brown.
