I really like tea with dates instead of candy. As my friend says, "You don't laugh, you try it.". A few weeks ago I bought dates that I didn't like the taste of. I washed them, put them in a half-liter jar and poured cognac on them so I could do something with them later. I found several recipes for baking with dates, combined them and got a good result.

Ingredients for the chocolate date cake:

  • Dates - 400 g
  • Cognac (for filling dates)
  • Butter (soft) - 150 g
  • Cocoa powder - 2 tablespoon
  • Kefir (yogurt, starter... 250g glass) - 1 glass
  • Wheat flour / Flour (250g glass) - 2 glass
  • Chicken Egg (If eggs are large, you can put 3 eggs) - 4 pcs
  • Sugar (250g glass) - 1 glass
  • Leavening Agent (topped) - 2 teaspoon
  • Salt - 1 pinch.
  • Vanilla sugar - 1 sachet.

How to cook chocolate date cake step by step with photos

1. Fill dates with cognac, cover and leave for 2 weeks in the fridge. After 2 weeks take out the dates soaked in cognac.

2. Remove the skin, remove the seed.

3. Finely chop them with a knife.

4. Sift 2 cups of flour into a bowl.

5. Add 2 tablespoons of cocoa.

6. Now add 2 teaspoons of baking powder and a pinch of salt.

7. Mix the dry mixture well with a whisk.

8. Separately, add sugar to the soft butter.

9. Then add the vanilla sugar.

10. Now beat with a mixer.

11. Add the eggs.

12. Continue beating. The result is a soft, delicate mass, reminiscent of buttercream.

13. Make a well in the middle of the dry mixture and pour 1 cup of kefir; you may also stir the kefir and the flour together a little by hand in the middle of the well.

18. Butter the baking dish and sprinkle with semolina. I have a solid 26cm in diameter. (Т. к. a lot of dough, a bigger one would do, somewhere between 28 and 30cm - I don't have one yet).

19. Pour the mixture into the prepared dish. 20. Bake in preheated oven at 180 degrees for 60-65 minutes. (My pie took 1 hour and 5 minutes to bake, since it was so filling. к. oven doesn't always display the right temperature. If you have a larger diameter mold, start checking the pie after about 40 minutes). Test for readiness with a wooden stick, the stick should stay dry.

21. Take the cake out of the oven and let it stand for 10-15 minutes.

22. Turn the cake out onto a piece of paper.

23. When it has cooled down you can sprinkle it with powdered sugar or pour evaporated milk over it. I wanted to cover it with white chocolate icing, but there was no white chocolate at home. So I made some chocolate frosting and just covered the cake.

24. This is a very hearty pie.

25. It turns out very soft and tender. Some of the dates sink to the bottom of the pie during baking.

26. Cut at. Slice.

27. It has a rich, chocolate and brandy flavor and a spongy, slightly crumbly texture.
