I rarely see recipes based on this dough, so I thought I'd share a family favorite! Light, thin, and crispy patties! For those who don't want a lot of dough, but just a thin crust around the filling! I've been using this recipe for 10 years, thanks to my mom!

Dough

  • Wheat Flour / Flour - 300 g
  • Butter (very chilled (15 min in the freezer)) - 150 g
  • Chicken egg - 2 pcs
  • Mineral water (also keep in the freezer for 15 min.) - 1 tablepoon
  • Salt - 1 pinch.
  • Egg yolk (to grease patties) - 1 pc
  • Lemon juice - 1 teaspoon

Stuffing

  • Mashed potatoes - 350 g
  • Champignons (Large, fresh. If small, 5 pieces) - 2 pcs
  • Dill - 10 g

How to cook triangles with chopped dough step by step with photos


I will start with the dough! Cut the butter into cubes and put in the freezer for 15 minutes.

Sift the flour, add a pinch of salt. If you want a brackish dough, add more salt. Place in the mixer along with the butter cubes. Our job is to make a crumbled mixture of butter and flour into small granules like peas. Who does not have a combine, you can crumble by hand with two large knives.

So that's what we have, then we act quickly. The main thing is not to let the butter melt.

Now using our hands we mix in our mixture one egg by one (just taken out of the fridge). Sprinkle with lemon juice. The dough may crumble a lot. Add ice water and knead.

And that's how we get the ball. The dough may look crumbly now, it should be.

Flatten it a little bit. That'll help it cool faster and make it easier to roll. Wrap it in cling film and put it in the freezer for 10 minutes. The dough can be prepared in advance and kept in the freezer for up to 2 months. And at any time, you can treat your family or friends to baked goods.

You can prepare the filling in advance. This time I made mashed potatoes with mushrooms and dill. I suggest adding some sautéed onions instead of dill - they are incredibly delicious. My husband doesn't like onions, so I added dill this time. I mash the boiled potatoes, adding butter, egg and cream of water. Thanks to the cream, the mashed potatoes are very tender. I fry the mushrooms under a lid with a drop of oil. So they simmer in their own juice, not in oil. Then I add the mushrooms and their juice to the mashed potatoes. Let's cool our stuffing and add fresh dill as a last element. I make the puree a little more liquid than I want it to be. It will be a little drier after baking.

Take out the dough, roll it thinly and cut it into squares. Place the filling. Spoon 2 teaspoons into each square.

Fold the dough into a triangle and make clips with a fork. To make the dough stick together well, dab the joints with water. Otherwise they may open during baking.

Heat the oven to 200 degrees. Brush the patties with egg yolk. If you don't have any baking paper handy. Grease a baking tray with butter, they won't stick at all. Bake the patties for 25 minutes. Everyone's oven is different, just watch the crust when it turns golden - they're done!

Here they are, our beauties! I had 16 patties. They are suitable for any table and any occasion. You can fill them in any way you like. They are really good with cheese and any type of sweet stuffing also goes well with cakes, for the sweet ones I add 100 grams of sugar to the dough. Enjoy! I hope you like this recipe!
