Many people probably love the combination of strawberries and chocolate, and when you add crumbly shortbread dough, delicate protein cream, and flavorful coconut shavings?!! It's all put together in my pie contest "In the Animal World".

Ingredients for Coconut Pie "penguin":

  • Eggs (2 in the batter, 1 - just the protein, in the cream) - 3 pcs
  • Sugar (1 cup - for batter, 1.5 for cream, glaze and jam) - 2,5 glass
  • Butter (100g. in batter, 50 g. for frosting) - 150 g
  • vanilla sugar (dough) - 1 sachet.
  • Wheat flour / Flour (dough) - 3 glass
  • Salt (in dough)
  • Coconut (dough) - 40 g
  • Strawberry (jam) - 150 g
  • Cream (I have 10% - frosting) - 100 ml
  • Cocoa powder (frosting) - 3 tablespoon

How to cook coconut cake "penguin" step by step with photos

For the dough, beat 2 eggs with a cup of sugar, pinch of salt and ѕachet of vanilla sugar.

100g. Melt the butter, add to the dough (after cooling slightly). I melt it in the microwave, put it on full power (900W), for 30-40 seconds. The edges begin to melt quickly, but the middle stays hard and cold. After 30-40 seconds, I take it out and leave it on the table to melt, what's around the non-melted piece is hot, it melts it, and the piece itself in turn cools all the butter.

And then we add the coconut shavings. I have the yellow one..

Add the flour gradually, first in a bowl, then on the table.

We form a ball of dough, wrap it in clingfilm, and place it in the refrigerator for about 40 minutes.

During this time we can prepare the glaze and the jam. For the jam, wash and peel the strawberries, add 0.5 cups of sugar and use a blender to blend everything.

Bring to a boil and simmer for 7 minutes, stirring.

For the glaze, add 0.5 cups of sugar to the cream (or milk).


And 50g. butter.

While stirring, boil the glaze. Bring it to the boil and cook it for a minute, stirring.

Now let's make the dough. I'd like to point out that I had a lot of dough, enough for a whole pie. But all the other ingredients I have given for this amount of dough, that is, with the calculations and the pie. So... Roll out the dough on the table, not thin (~ 1 cm). Put a template of paper. Cut out on the contour. We transfer the template to the baking tray greased with butter.

Next, in the template we cut out everything that should be in the penguin white (eyes and chest). Using this template, we cut out one more piece and put it on top.

Now cut out paws and a beak separately. Put them on a baking tray, also separately.

Bake in a preheated 170 degrees oven for about 20-25 minutes until golden. Be careful, the small parts may start to turn golden sooner.

Now whip the egg white with the remaining sugar (0.5 cup), cover the parts that should be white with egg white.

Glaze (in several layers) the dark places.

And dip the paws and beak in the jam. Put them in place.

Here we have such a penguin. Very tasty.

And from the rest of the dough I baked a pie. Spread the dough out and baked it. Creamed it with buttercream, then jam and chocolate. The chocolate didn't quite set in the pie (lots of it) and it is so good!!!
