Ingredients for the cake "colorful braid":

  • Wheat Flour / Flour (highest grade) - 450 g
  • Milk - 100 ml
  • Butter - 80 g
  • Salt - 0,5 teaspoon
  • Vanilla sugar - 1 sachet.
  • Egg (C1, 100g) - 2 pcs
  • Sugar - 150 g
  • Yeast (pressed or quick yeast for muffins - 7 g) - 15 g
  • Water (boiling) - 100 ml
  • Egg yolk (for greasing) - 1 pc
  • Cherry (dried) - 1 handful.
  • Gooseberries - 1 handful.
  • Poppy seeds - (steamed, shredded) - 3 tablespoon
  • Honey - 1 tablespoon

How to cook cake "colorful braid" step by step with photos

I use a REDMOND bread maker to make the yeast dough. Dough for the cake can be made in two ways: put all the ingredients at room temperature, indicated in the recipe (replace boiling water with milk), into the bucket of the oven, set the "Dough" and in 1.5 hours you get a bucket of fragrant pastry, or prepare the dough using the oven method. The dough for the cake is delicious in either case, but for the anniversary recipe will be prepared with a custard dough, in the evening you can prepare sourdough, and in the morning to put the dough to bake.

To prepare the custard dough base, pour 100 ml of boiling water into a bowl, pour in portions of 30-40 grams of flour from the total amount, vigorously stirring the mixture with a whisk, so that no lumps have set. Weigh the eggs; the recipe calls for the weight of the eggs to be 100 grams; if the weight is more than 100 grams, then reduce the amount of milk by that amount (i.e. е. Eggs + milk = 200g). Lightly beat the eggs with a whisk and 40 grams of sugar. Pour the beaten eggs into the warm custard mixture, stir well, then add the warm milk, and stir until smooth. Then crumble pressed yeast (I use extra), mix until yeast is dissolved.

In the bucket of the bread machine pour the sifted flour, the remaining sugar 110g, salt, vanilla sugar, and mix. Pour slices of butter into the flour, stir well and make a hole in the flour with a spoon. Pour prepared yeast mixture into it, do not mix. Put bucket in the oven. At around 20C the stew may mature for about 8-10 hours, at higher temperatures reduce to 6 hours. In my case the oven was on the loggia from 10 p.m. to 6 a.m., then set the mode "Dough".

To prepare the poppy seeds, wash them, pour water over them, boil, drain the water. Pour water over the poppy seeds again, simmer for about 20 minutes until the seeds soften, then strain off with a sieve. Grind the poppy seeds with sugar (to taste) in a blender, put in a saucepan, add honey (optional), dry until the liquid evaporates on low heat, the stuffing should be crumbly, without excess moisture. To prepare the stuffing from apricots pre-wash, dry and cut into small cubes. Also wash and dry dried cherries.

Grease your hands with oil, spread out the dough on a work surface.

Divide the dough into 4 pieces of about 250 g.

Roll out each of 3 pieces of dough into a rectangle, put the dried apricots filling in the middle, seal edges firmly.

Then spread stuffing with dried cherries, fasten edges firmly.

Then lay out poppy seed filling, fasten edges tightly.

The length of each piece should be slightly longer than the baking mold.

Shape the pie into a braid. The size of the cake tin is 24x14 cm.

Grease the egg yolk on top of the cake, decorate it however you like. Spread out the rest of the pastry into the loaf tin. Allow the cake to proof for about an hour (until it doubles in size). Bake in a preheated oven until golden brown (test on a dry splinter). I used a REDMOND scale to weigh the ingredients.
