I want to treat you, my dear cooks, to my first recipe - a wonderful cottage cheese tart with a tender cream filling, juicy peaches, wrapped in crumbly shortbread dough. Let a little piece of this dessert bring a ray of sunshine to these winter days (and not only). Recipe made with the help of the German magazine "Alles fur die Frau".

Ingredients for the cottage cheese tart with peaches:


  • Wheat flour / Flour (sifted - into dough) - 250 g
  • Sugar (90g in batter; 100g in stuffing) - 190 g
  • Butter (cold, into dough) - 125 g
  • Chicken egg (1 piece for dough; 4 pieces for stuffing) - 5 units
  • Cheese mass (or skimmed cottage cheese in the filling) - 500 g
  • Cream (for the filling, any fat content) - 200 ml
  • Corn starch (in the stuffing) - 2 tablespoon
  • Peach (canned - in stuffing, net weight 480g) - 1 jar.
  • lemon zest (lime, in the stuffing) - 1 teaspoon
  • Water (plain, warm - in the dough) - 3 tablespoon
  • Salt (as needed - in dough and filling)
  • Powdered sugar (for powdering) - 5 tablespoon

How to cook cottage cheese tart with peaches step by step with photos


Here are the products we are making it with. I used 10% cottage cheese and 30% cream, but it's not important. The first step we need to take is to open a can of peaches and sieve the fruit to remove excess moisture.

We mix the flour, sugar (90g), salt and pour a hill on the work surface. In the center of the hill make "Make a funnel in the center of the hill". Cut cold butter into pieces and put around "the funnel". Like this.

In the center "of the funnel" and put an egg and 3 tablespoons of warm water in the center of the funnel.l of warm water.

Chop all this beauty with a knife until crumbly. Maybe it makes sense to mix the egg and water separately and pour it into the "funnel", I have not done it - all is chopped perfectly.

Hands knead the dough into a "ball", Wrap it in clingfilm and put in the fridge for 30 minutes.

While the dough in the cold, let's make the filling. If you are using regular cottage cheese, you should strain it through a sieve once or twice until it becomes creamy, as particles are undesirable. In a suitable container mix all the ingredients for the filling - cottage cheese, sugar, salt, eggs, cream, starch. I lightly beat everything with a mixer until homogeneous. The filling is liquid. We add 1 tsp.l. of lemon zest, I have lime.

After 30 minutes, we take out our pastry and, using 2 sheets of baking paper, we roll it out putting the pastry between the sheets. Roll out to the size of your baking sheet, plus the rims. The optimal size of the mold here is 26 cm in diameter, roll out a diameter of 30 cm.

Carefully remove one sheet of paper, and using the second sheet of paper, transfer the dough into the greased mould. Spread the dough in the dish and gently peel off the second sheet of paper (it was on top).

The dough is a little sticky. Spread out the excess dough, you can help a little with flour.

Pour the filling, distributing it evenly over the mold.

We cut peaches and lay them out in a beautiful pattern on top, slightly pressing them into the stuffing. I have not turned out very beautifully, but you, I am sure, will be much better.

We put our cake in a preheated oven (200 degrees) for 40-50 minutes. I did not have enough time, after 40 minutes I covered the top with foil and left it for another 20 minutes. The stuffing had enough time, I was confused by the dough (maybe because of the ceramic mold).

That's all! It remains to wait for the tart to cool completely and enjoy. Decorate the finished dessert with powdered sugar. Bon appetit, my dear!
