Today, dear cooks, I want to treat you to my version of Kurnik. Since ancient times, this pie has been considered a special, festive pie, which was served on solemn occasions. For example, at weddings. For a wedding cake they tried to make it big and high, decorated in many ways and served it up at the table. For the wedding feast, two kurniks were made at once - one for the bridegroom and one for the bride. There are even special wedding omens associated with kurnik - the pie was broken above the heads of the newlyweds, and the more grains of wheat fell out, the more money the young family would have. At our wedding now bake Karavay, but I found a reason to make Kurnik, linking it to its history)) We have matchmaking and introducing the groom's parents to the bride's parents!)

Ingredients for kurnik:

Shortbread Dough

  • Wheat flour / Flour - 300 g
  • Butter - 150 g
  • Water - (As an option, see the consistency of the dough, it may take less. And the water must be very cold, I add ice to it.) - 80 ml
  • Salt - 1/2 teaspoon


  • Wheat flour / Flour - 100 g
  • Milk - 1 glass
  • Chicken egg - 1 pc
  • Vegetable oil - 4 tablespoon
  • Greens (If desired, I add spices (basil, marjoram instead of herbs.).)
  • Salt - 1/2 teaspoon

Chicken stuffing

  • Chicken breast (Boil it. I boil it with allspice, bay leaf and salt. Makes a nice broth.) - 1 pc
  • Greens

Mushroom stuffing

  • Champignons - 200 g
  • Onions - 1 pc
  • Buckwheat grits (Half a cup of groats. Boil it, I cooked it in the broth from the chicken.) - 1/2 glass

Egg Stuffing

  • Chicken egg (Depending on size of eggs, you may need less.) - 4 pcs

How to cook kurnik step by step with photos

To begin with, make the dough. You can use shortbread, yeast dough, or any dough you like for the Couronix. I like it with shortbread, but I also have a favorite, which is perfect for me. I grind very cold butter and flour in a blender, then add a little water, mix a little more in the blender, then put everything on the table and quickly gather the dough into a ball, adding more water if necessary. The dough is ready. I chill it for 30 minutes. I make the dough and filling the night before and in the morning I make the pie, in that case you have to take the dough out of the cold for 30 minutes before you start working with it. The next step is to make the pancakes. Everyone has their own favorite pancake recipe, I'm not imposing this one on you specifically, absolutely any thin pancakes will work here. Mine are very simple. I use a shaker, beat the egg, milk, salt. Then I add flour and beat it again, at the end I add vegetable oil, herbs and mix until homogeneous. It remains only to bake pancakes.

It remains only to prepare the stuffing, as I wrote earlier, make them the night before. Let's start with chicken. Boil the chicken, chop it finely, mix it with the herbs. Leave the broth, we will need it.

Now for the mushroom stuffing. Fry mushrooms with onions. Boil buckwheat in chicken broth, mix with mushrooms and onions. If you cook buckwheat in water, then do not forget to salt, my broth was already pretty salty.

The eggs are quite simple, they need to be boiled and finely chopped. Done!

It's just a small thing! Assemble the kurnik! The shortbread dough is divided into two parts, one slightly bigger than the other. Roll out the smaller part of the dough thinly into a circle.

Then put the pancake, chicken stuffing, pancake again, mushroom stuffing, pancake, egg stuffing, pancake. I put two pancakes on top.

Place the second part of the dough on top, make a hole in the middle and brush with egg yolk, decorate as you wish.

We put in the oven heated up to 180 degrees beforehand, for 30 minutes. Of course, time is based on your oven.
