You can make these "Crabs" with your favorite dough and toppings. The kids will love these patties! I got the idea for the molds again from a Chinese cooking site.

  • Wheat flour / Flour (for dough) - 250 g
  • Yeast (dry quick dissolving yeast for dough) - 1.5 teaspoon
  • Sugar (for dough - 40g; for stuffing - 30g) - 70 g
  • Salt (in dough) - 0.5 teaspoon
  • Egg (in the dough -1/2 part; for greasing the patties - 1/2 part) - 1 pc
  • Milk (for dough) - 130 ml
  • Butter (into the dough) - 25 g
  • Cheese cheese (for stuffing (drier is better)) - 130 g
  • Egg yolk (in stuffing) - 1 pc
  • Vanillin (in the stuffing)
  • Cranberries (dried, in the stuffing) - 20 g
  • Vegetable oil (to grease the tray) - 1 teaspoon
  • Dark Chocolate (for decoration) - 10 g
  • Sour cream (for decoration) - 0.3 teaspoon

How to cook patties "crabs" with cottage cheese and dried cranberries step by step with photos


The dough for the patties can be made by hand or with a bread machine. I am very happy with the way the yeast dough kneads in the bread machine, so I choose the second option. Pour warm milk into the bucket of the baker, add the yeast and leave for 5-10 minutes.

Then add sifted flour, sugar, salt, 1/2 part of a little beaten egg, and room temperature butter.

We put the bucket in the baking machine and turn on the mode of kneading the dough.

When the dough is ready, put it in a bowl and cover with cling film

Allow it to rise two or three times in a warm place.

We transfer the dough to the table and knead it well.

Then I use a kitchen scale (you can divide the dough into 12 equal parts, make round patties of 6 parts and form claws and feet of the other 6). Weigh 6 pieces of 38 grams each on the scales, and divide the rest of the dough into 6 equal pieces (weighing about 40-41 grams). Shape all the pieces of dough into balls.

Cover the dough with clingfilm and let it rest for about 10-15 minutes.

In the meantime prepare the filling. In a bowl combine cottage cheese, egg yolk, sugar, vanilla and dried cranberries.

Mix all ingredients well.

Roll out the dough (which weighs 40-41 grams) into a circle.

Put stuffing on top of the dough,

Form a round pie, pinching the dough well at the top.

Now we need to prepare the end pieces for the crabs. We divide the dough (each 38 grams) into 2 parts of 7 grams and 8 parts of 3 grams.

With the dough of 3 grams we make drop-shaped "feet" - there are eight of them.

Each 7 grams piece of dough, thinly roll out into an oval

Glaze the patties with the rest of the beaten egg from the batter.

Bake the patties in the oven at 180 degrees for about 15-18 minutes, until they are nicely browned. I baked the patties on two baking trays, since. к.
