The mini meat patties are fit for a buffet, are hearty and everyone loves them! Made with my favorite pastry, which I've already introduced you to - it's similar to puff pastry, but quick.

Ingredients for crispy meat patties:


Dough

  • Wheat flour / Flour (+20,30 g) - 280 g
  • Butter - 150 g
  • Sour cream (20% thick) - 150 g
  • Salt - 1 pinch.
  • Soda dissolved in vinegar - 0.5 teaspoon

Stuffing

  • Ground beef (pork) - 400 g
  • Onions - 1 pc
  • Garlic - 2 clove
  • Bacon - 50 g
  • Seasoning - to taste
  • Soy sauce (TM"Kikkoman") - 2 tablespoon

For the top

  • Cream (any) - 3 tablespoon
  • Poppy - 25 pinch.

How to cook crispy meat patties step by step with photos


Crumble butter or margarine straight from the fridge into the sifted flour (as long as there is 280 grams of flour). I keep inexpensive 68% butter for this purpose.

Chop it with a knife into crumbs.

Add sour cream. The density of the dough will depend on the thickness of the sour cream, so take that into account.

Season with salt and put out the baking soda on a spoon. I did it with apple cider vinegar, that's why the color is pink.

First we mix the dough with a spoon.

Now we have to knead by hand. But quickly, so the dough doesn't get too hot on your hands.

If it gets very sticky on your hands at the end, add more flour, a spoonful at a time. I took another 20 grams. Place in the fridge for a few hours, or at least an hour.

Go on to minced meat. Choose seasonings, which you like, and which will not displease your guests. I took my favorite crayon mixes. One "Meat dish mix"...

And this "The pepper steak mix"-Very flavorful.

Chop onions, garlic.

Pour it on the minced meat.

Crumble the bacon, just frozen, into small cubes.

Fry, but not until crispy as you want the filling to be juicy!

Pour the bacon over the stuffing, knead thoroughly and leave a little extra fat in the pan.

Shift the stuffing into the frying pan while it's still hot and quickly break it up into pieces with a fork.

We do this over high heat for about 10 minutes, until all the onions are cooked through.

Finally we pour in the soy sauce for frying from TM"Kikkoman".

Keep it on the heat, then put the lid on and turn off the gas.

Take out the dough and divide it in half or roll it out as a whole if your work surface allows.

I made the dough in two steps, here's the first layer. My flour is streaked with bran (Estonian), hence the shape of the dough, but it's healthier than plain white flour.

Roll out thinly, divide into squares, put the scraps with the rest of the dough.

I will show you the second layer, which is larger because of the trimmings. It is 30cm by 34cm in size and covers the entire mat. Divide it into squares as well. The size of the squares is respectively 7-8 cm.

Put 1 teaspoon of minced meat on each one with a slide.

And so on all the others. Run your finger or a brush dipped in water around the edges.

I have some stuffing left over, but we successfully ate it with the buckwheat.

Fold the square into a triangle, glue the seams and connect the corners.

Prick the top with a fork. You can also prick the edge with a fork to assure.

Brush the top with cream or beaten egg (or egg yolk and milk). Bake the first batch on a silicone baking sheet for 20 minutes at 180°.

Decorate with poppy seeds or sesame seeds on top.

I baked the rest of the pies on a pizza stone for about 22 minutes., The pizza stone needs time to heat up.

The patties are completely crispy straight out of the oven, overnight, covered of course, they will become soft.

The patties are ready to eat!

Instead of meat, you could bake with one bacon and a hard-boiled egg, for example, or with ham.
