Ingredients for crumbled plum cake and cottage cheese casserole:


  • Wheat flour / Flour (375 for dough, 100 for streusel) - 475 g
  • Yeast (dry) - 6 g
  • Sugar (75 for dough, 125 for filling and streusel) - 200 g
  • Butter (75 - into batter, 75 - into streusel) - 150 g
  • Milk - 200 ml
  • Cottage cheese - 250 g
  • Vanilla pudding - 1 package.
  • Vanilla sugar (1 for stuffing, 1 for streusel) - 2 sachet.
  • Egg yolk - 2 pcs
  • Plum - 300 g

How to cook crumbled plum cake and cottage cheese casserole step by step with photos


Prepare products for the dough. Heat milk.

Mix flour with yeast and sugar.

Add melted butter and knead with your hands.

Pour in warm milk and knead the dough (you can do it with a hand mixer).

Knead the dough well, then knock it vigorously on the table a few times. Then put it in a bowl, cover with cling film and leave it in a warm place so that it doubles in volume.

Meanwhile you can prepare the filling. Begin by making the ingredients. Rub the cottage cheese, if you wish, through a sieve. Cut the plums in half, remove the seeds and then cut each half lengthwise into two more pieces.

Mix the cottage cheese with the vanilla pudding powder, 1 cup vanilla sugar, 3 tablespoon sugar and 2 egg yolks beaten into a froth. Set aside.

Butter a large round bowl with a tube in the middle, 25-26 cm in diameter. Knead the dough well once more and divide into 8 equal pieces. Roll each piece into a neat ball and put all the balls into the mold.

Make hollows in the balls and fill them with the curd mixture. Arrange two or three slices of plums on top of the cottage cheese (depending on their size).

Melt butter (75g), add remaining vanilla and simple sugar, add flour and grate into a fairly coarse crumb. If necessary you can add more flour.

Sprinkle the resulting streusel evenly over the pie and send it to the oven heated to 200*C.

Bake for about 35-40 minutes.

Now the promised bonus. There was a lot of cottage cheese filling and it didn't all go away. You can safely halve the amount of products for it. But I already had some. I thought about it and decided to make a casserole. For this, I added 1 tablespoon of semolina without a hill of semolina, 0.5 tablespoon of coconut milk (or sour cream), a pinch of salt, a handful of raisins and 2 egg whites (leftover from the stuffing) beaten into a stiff foam.

Generally speaking, you have to judge by the amount of leftover curd mixture you have. Mix everything well and place it in a small bowl, greased with butter and sprinkled with breadcrumbs. Spread small flakes of butter on top.

Put in oven. Bake at 180 degrees Celsius. Took it out in 10 minutes, sprinkled with almond flakes and baked until ready to serve. I didn't time it, just took it out when it browned.
