I just don't have the words to describe this delicious. Baked the pie yesterday, it was pretty big, but this morning there was not a crumb. The pie completely lives up to its name, it's really crispy, very flavorful, with a delicate filling... It's just incredibly delicious))) Rarely do I experience such delight in baking. I saw the recipe "VK", In the process of cooking, I made some changes and adjustments, so to speak, adapted to my taste.

Ingredients for the crunchy pie with pears and pecans:


  • Oat flakes (Hercules, #3 in the dough, with a slide) - 10 tablespoon
  • Wheat flour / Flour (for dough, + 4 tablespoon to cover) - 100 g
  • Butter (150g - for dough, 100g - for coating) - 250 g
  • sugar (5 tablespoon - in batter, 5 tablespoon - in stuffing, 1/2 cup - in coating) - 14-15 tablespoon
  • hen's egg (small - in the batter) - 1 pc
  • Salt (in dough, in coating)
  • walnuts (in the filling) - 100 g
  • Pear (firm, green, in stuffing) - 4-6 pcs
  • Cinnamon (in the stuffing) - 1 teaspoon

How to cook crunchy pears and pecans step by step with photos


Prepare the ingredients for the dough. Take the butter out of the fridge beforehand, it has to be at room temperature, completely soft.

Pour the oats, sugar and salt into a bowl

And add the butter. Mix everything well.

Add the flour in three steps,

And at the very end, the egg. Knead the dough well once more.

Add more flour if needed. It took me more than 100 grams. The dough should be soft and pliable, but it should not stick to your hands and should hold its shape. Form a ball and put it in a plastic bag in the refrigerator for 10-20 minutes.

Meanwhile prepare the filling. Peel pears and cut into small pieces. Chop pears in a blender, but not too finely. Preheat the oven to 200°C.

Line the spring form baking sheet with baking paper and lightly grease it. You can simply grease the cake pan and sprinkle it with flour.

Place dough in the dish, rub it in to form a high rim. Prick it with a fork and pop it in the oven for 10 minutes.

Take out the cake and trim the rims to about half or a third of their height. Do not discard the trimmings.

Stir pears with sugar and place on top of pie crust.

Sprinkle with the cinnamon.

Sprinkle walnuts on top (leave about a third) and cinnamon. Place the pie in the oven for another 7 minutes.

While the pie is baking, prepare the coating.

Melt the butter, add the sugar and a pinch of salt, stir over low heat until dissolved.

Then add flour and mix the contents of the pan thoroughly.

Pour the mixture on the filling and bake the pie for another 15-20 minutes, until it is ready. I lowered temperature to 170°С. At the same time bake the trimmings until golden brown.

Take ready pie out of the oven

And immediately sprinkle it on top of the cake scraps, kneaded into a coarse crumb, and the remaining nuts.

Before serving the pie, it needs to cool down.

Really, we couldn't wait... the pie gave off such a crazy aroma!!!
