Cooked Kubete

This is not the original recipe for the famous Tatar pie. It's a meat pie adapted to our family's tastes. And since this pie is a success not only with members of my family, but also regularly re-written by guests, neighbors, and those who have had time to try this pie. So I decided at my own risk - to put my version on the cooker. Kubete recipes here a lot and they are similar to each other, yet there are different little differences. I hope that my recipe will be helpful to someone.

Ingredients for Cubete:

  • Beef - 250 g
  • Pork - 250 g
  • Onions - 3 pcs
  • Potatoes - 3 pcs
  • Spices (to taste)
  • Wheat flour / Flour - 4 glass
  • Milk - 130 ml
  • Sour cream - 130 ml
  • Margarine - 200 g
  • Chicken egg (for grease) - 1 pc
  • Vinegar essence - 1 tablespoon
  • Vegetable oil - 0.5 glass

How to cook cubete step by step with photos

Meat pork and beef cut into small cubes, my love the finer, the better, but still not to the state of minced meat grinded on the meat grinder.

Onion (1 pc) diced, mix with meat, season with spices - salt and pepper to taste, I add more cumin. Cover and leave in marinade in the refrigerator on the bottom shelf for at least 2 hours.

For the dough. Grate the frozen margarine on a coarse grater and mix with 2 cups of flour - grind with your fingers to crumbs. Add sour cream, milk, vinegar - mix well, then add flour and knead the dough. Roll the dough into a ball, put it into a sachet and leave in the fridge for 30 minutes.

After 30 minutes, take out the dough, roll it into a sheet, smear vegetable oil all over the surface, make an envelope and put it in the cachet and leave in the fridge for 20 minutes. This procedure should be repeated preferably 2-3 times (just until the meat marinates).

Dice potatoes and 2 onions, salt and pepper and mix with marinated meat. Divide the dough into two parts (one larger and one smaller). Roll out the larger part of the dough and place it on a greased baking pan, shape the rims (I used a cast-iron skillet). Place the filling on top, pressing it a little with your fingers.

Roll out the rest of the dough and cover the filling, pinch the edges. Make a little hole in the middle. Decorate our cake. Brush with egg yolk. In the original recipe we fill the hole with a piece of dough or an onion and add broth inside the pie. I do not do anything of the kind in this recipe. I pour the rest of the marinade juice into the hole, and send it to the oven heated to 200 degrees until the pie is covered with a crust.

After the pie is golden brown, take it out. Cover with foil and put in the oven until cooked. Cooking time depends on the appearance of crust. In aggregate, the pie cooks for 1 hour. That is after putting the pie in the oven, in about 25-30 minutes the necessary crust appears. Then the pie is covered with foil and put in the oven for another 30 minutes. After that remove the foil. Butter the pie and put it in the oven again for 5 minutes.

So this is my Kubete. Unlike the original, I don't make it in layers. I don't add broth - the abundance of onions in the filling replaces the moisture. I use pork in the filling. I've always loved cubete. I used to make it strictly according to the recipes in the different cookbooks. But it just so happens that everyone in my family has their own preferences - preferences. My husband likes chunky meat, my kids like ground meat, my husband prefers beef, my kids like pork. My daughter can not stand onions (by the way, in a pie made this way, in spite of the large content of onions - it is almost not felt). I couldn't please everyone at once. And once, when I got mad, I made a pie like this. And it was to everyone's liking. I present it for your judgment.
