Dear cooks, today I want to treat you to a very delicious blueberry pie. This is a traditional and very much loved pie in Czech Republic, I do not know anyone who does not like it. All self-respecting grandmothers bake it for their grandchildren, and they are nostalgic for the rest of their lives "coves with boruvkas" (that's how it's called in Czech). So that one day our grandchildren will remember us with a kind word and, using some subtleties, we will create a real diamond among such pies. This cake is truly luxurious - it's divinely beautiful, delicious, and hopefully will become a frequent guest on your table. Welcome to a sumptuous tea party!

How to cook luxury blueberry pie step by step with photos

A 25x35 cm baking tin is enough for a big cake, half a portion for a 26 cm round. I use two kinds of blueberries in the filling, a small wild blueberry and a garden orchard for decoration "Canadian", of course you can use only one kind of blueberries. We measure blueberries with a half-liter measure, I forgot to weigh them in grams. Wash blueberries, dry them on a towel (take into account that the berries get very dirty, traces of juice are impossible to wash then). Then pour the berries into a bowl, sprinkle with one or two tablespoons of sugar and shake several times, so that the sugar spreads over the berries.

Sift flour and baking powder into a bowl, add sugar and vanilla sugar, and stir together. Separately whisk together the yogurt and eggs.

Combine and knead well, preferably with a food processor. The dough comes out thick and viscous. Line the bottom of the cake pan with baking paper, pour the batter out and spread it over the surface.

For the filling, divide the eggs into whites and yolks. Whisk the egg whites with a pinch of salt until stiff, continue whisking until stiff, add the sugar and beat until stiff. Mix the cottage cheese with the egg yolks and gently fold in the egg whites. Try the sugar, you may want to sweeten more.

In a separate bowl prepare the sprinkles - use your fingers to make a crumb from the flour, sugar and butter, you will feel that a lot of butter, but it should be, the crumb is quite oily, but then it becomes pleasantly crispy. Spread the curd mixture on the surface of the dough.

Sprinkle the blueberries on top of the curd and sprinkle the sweet sprinkles on top.

Bake the cake in preheated oven at 180 degrees for about 35-40 minutes. When ready leave the cake in the cake tin until it cools down. Then take it out. Spread fresh blueberries on the surface and sprinkle with powdered sugar on top.

Cut into individual slices, this cake looks very smart and elegant. It will decorate any holiday table!

Bon appetit!!
