I had a thought: why not make a pie on breadcrumbs, especially since I have been craving some home-made apple jam and freshly frosted raspberries. The result is in front of you and it's up to you to judge too, but it was very good for me. Soft, tender, but at the same time dense and slightly moist dough structure. Sweet bites of apple jam and sour, aromatic fresh raspberries create a delightful balance of taste, and the aroma of cinnamon adds new delicacy to the mix, the aroma of rusks also gave a touch of its own.

Ingredients for "Don't waste good things" rusks pie:


  • Breadcrumbs (ground crumbs from white bread or loaf) - 1 glass
  • semolina (with a small slide) - 2 tablespoon
  • Wheat flour / Flour - 0.5 glass
  • Dough leavening agent - 2 teaspoon
  • Egg - 3 pcs
  • Sugar - 100 g
  • Margarine - 50 g
  • Vegetable oil - 3 tablespoon
  • Yogurt (1 jar) - 125 g
  • Cinnamon - 1 teaspoon
  • Vanillin
  • Salt
  • Jam (apple, 1 cup berries without liquid and 5-7 tbsp.l. liquid from jam) - 1 glass
  • Raspberries - 1-1.5 glass
  • Butter - 1 tablespoon

Divide jam into liquid and solid parts )))) Separate apples from syrup. I had a jam like this. Peel apples from middles, chop a little. Took a glass of apples, already cut and peeled. My 200 ml glasses.

Rub margarine and vegetable oil with sugar, beat eggs one at a time, beating well each time.

Add yogurt, vanilla and cinnamon, stir to combine.

Add dried breadcrumbs and semolina, mix together. Do not use breadcrumbs, they give off an unpleasant odor, but homemade breadcrumbs are so fragrant. You can take bakery breadcrumbs, the usual tea breadcrumbs, and grind them with a meat grinder.

Add pieces of apples from the jam, mix gently, sift in the flour with the baking powder and knead the dough. The batter turns out quite thick, a spoon stands in it and has great difficulty falling down))

At the very end add raspberries. Don't need to defrost before serving. But you want the berries individually, not a single clump of fruit and ice. You can use any type of berries, sweet or sour. I wanted to use cranberries or cowberries, but I changed my mind at the last minute and put raspberries. Cherries or currants would also be perfect.

Place the dough in a mold and bake for about 40-45 minutes, at 180 degrees, until dry, depending on the oven the time may be more or less.

Mix a little jam liquid with water, if it's too thick, and heat butter until it has dissolved, mix well.

Take out the ready pie, but do not turn off the oven, pierce often with a splinter, pour the syrup and put back in the oven, after 1 minute turn off the oven and leave the pie there for 30-40 minutes, or until the oven cools down.

Take the completely cooled or slightly warm cake out of the mold, let it rest for a while on a plate, if you can stand it, pour the green tea and eat, eat, eat!
