It's probably no secret how delicious and delicate French casserole tarts are "Clafouti"! Here was a secret for me! What is this pie made of almost pancake dough? Turns out it's just wonderful! Tender and soft and juicy. I made my clafouti in two layers with apple and plum - hence the name "A Loving Couple". I checked on the internet before publishing the recipe - I found only one similar version of clafouti with apples and plums, but I didn't despair and posted mine. The differences are big: I got my own proportions of dough ingredients while cooking; I put apples and plums in layers; I didn't make a small portioned clafouti, but a big tall pie, and with my favorite raisin - streusel! So, try it, it's very delicious: moderately sweet pastry with a touch of fruit sourness and crunchy streusel! P.S. I also wrote the number of ingredients for the second version of the filling - for a triple clafouti! - With apples, plums and pears, if someone needs it

Ingredients for double clafouti "loving couple" With Streusel:

Clafouti Dough

  • Eggs - 2 pcs
  • Wheat flour / Flour - 150 g
  • Milk (or 250 ml) - 200 ml
  • Sugar (for a moderately sweet cake, more is possible) - 100 g
  • Vanillin (Optional) - 1 pinch.
  • Butter (Melt. Can be substituted with vegetable oil) - 1 tablespoon

Filling for double clafouti

  • Apple (I have a green sour one) - 200 g
  • Cinnamon - 1/4 teaspoon
  • Plum (about 5-6 small ones) - 200 g

Triple clafouti filling

  • Apple (sweet and sour) - 150 g
  • Plum - 100 g
  • Pear (sweet) - 150 g
  • Cinnamon (to taste) - 1/4 teaspoon


  • Cereal Flakes (you can have Hercules, I have Multigrain) - 6 tablespoon
  • Butter (softened, 1-2 tbsp.l.) - 1 tablespoon
  • Sugar (to taste. You can also put cinnamon, vanilla, seeds in the streusel)

It's really easy. If the oven takes a long time to warm up, turn it to 180 degrees. Separate the egg whites from the yolks and put them in the fridge Mix the yolks with the milk and melted butter and knead

Sift in flour, mix. You can use a blender or a mixer to beat it, to avoid lumps

Wash and grate fruits beforehand Slice into small pieces or whichever you prefer. The apples can be sprinkled with lemon juice, so that they don't darken while we finish the dough (but it doesn't matter: no one will look at the color of the apples, because they won't tear themselves away from eating the clafouti

We take out the whites, add a pinch of vanilla

And whip them at first on low power until they increase in volume for half a minute. We get a light, fluffy froth

Add sugar and beat until a thick foam for 1-2 minutes. I do not whip directly to peaks - I do not see the need in this, we are not preparing a souffle

Pour the egg white foam into the batter

Gently mix from bottom to top

Butter the mold.

I have a pudding tin narrowed down, so I will lay the fruit in three layers, alternating with the dough: 1/3 plum, apple, 2/3 plum You can stack plums and apples in two layers or make three layers with stuffing #2 of pears, apples, plums So, we pour a little dough (I didn't do it, but it's better to pour - when you take out the cake, the plums won't fall off the bottom :D) and put a layer of plums

Fill up with pastry

And add apples, sprinkle with cinnamon if you wish

Pour the batter and spread 2/3 of the plums (I was cutting the plums in two layers, so there was not much left for the top layer)

Make streusel (my oven is heating up quickly, I am turning it on now) Mix crumbs, soft butter and sugar

Spread the crumbs on the clafouti (you can make more streusel)

Put the cake in the oven for 40-50 minutes If you have a round shape and the oven is low, 35 minutes may be enough I always repeat: be guided by your oven ;) When the pie has just browned, I covered it with foil and baked it further Check with a match and intuition :) Т. к. a match may not come out dry even from the finished pie - if the fruit "gets wet"

The clafouti settled a little in the center as it cooled, but it didn't affect the taste in any way!
