For the dough

  • Wheat flour / Flour - 420 g
  • Butter - 50 g
  • Vegetable oil - 50 ml
  • Yeast (dry) - 1.5 teaspoon
  • Sugar - 2 tablespoon
  • Vanillin - 1 sachet.
  • Salt - 1 teaspoon
  • Milk - 300 ml

For the filling

  • Plum - 20 pcs
  • Apple - 3 pcs
  • Sugar - 3 tablespoon
  • Starch (any) - 2 teaspoon
  • Butter - 20 g
  • clarified butter - 2 tablespoon
  • Cinnamon (with sugar) - 1 unit.

How to cook double-layer apple plum cinnamon pie step by step with photos

1. Make sourdough. Mix 1 tablespoon of flour (of the total amount) with the yeast. Dissolve sugar in warm milk (60 ml) and add flour mixture (flour with baking powder), beat with a whisk. Let's put a bowl with leaven in a warm place till a foamy cap will form, about 20 minutes.

2. Prepare dough. Melt butter in the microwave. Add milk, oil, stew, vanilla and mix.

3. Sift remaining flour through a sieve. Then mix with salt. Add flour mixture in small portions to the liquid mixture and knead into a smooth dough, which is not sticky.

4. Grease a clean bowl with vegetable oil (0.5 tablespoon), put the dough in and twist. Cover the bowl with cling film and put it in a warm place to increase the dough by 2-3 times.

5. Prepare stuffing. Peel and core off apples (2 pcs) and cut into wedges.

6. Remove pips from plums and cut into 2 parts.

7. Melt sugar in butter.

8. Place the plum and slightly simmer (about 2 minutes) until medium soft. It depends on whether the plum is hard or soft. Then put it on a plate. Leave the syrup.

9. For the cake decoration take a red apple and remove the seeds. Stew until medium soft.

10. Knead the dough until soft and let it rise (about 20 minutes) under the cling film.

11. Turn out the dough on a cutting board and divide into 3 portions.

12. Roll out each piece of dough into a circle.

13. With a rolling pin, place the circle on a buttered baking tray or mould (F28 cm). Brush the pastry with melted butter and sprinkle with starch (1 teaspoon).

14. Place the plums on the dough. Place the second rolled out circle on the plum and butter it, sprinkle it with starch (1 teaspoon).

15. Arrange apple slices and sprinkle with cinnamon and sugar. Fold in the sides of the cake.

16. Roll out one-third of the pastry into sheets and cut into strips. Cover the top of the pie with the shaped strips. Make rose shapes from the pastry and red apple slices to decorate the pie.

17. Put the apple slices on the strips and close the edge with the pastry and make the roses.

18. Decorate the cake with the rosettes and cover it with cling film. Put in a baking tray in a warm place until the cake doubles in size, about 20 minutes.

19. Put the cake tin in a preheated oven at 180°C for about 30 minutes, or until pie is browned. Then grease the cake with whisked egg yolk (with 1 tablespoon of milk + 1 pint of sugar) and put it in the oven for 2 minutes until it is shiny and crusty.
