Ingredients for Duck Meat and Rice Pie:


For the dough

  • Wheat flour / Flour - 3 glass
  • Milk - 200 ml
  • Chicken egg - 1 pc
  • Egg yolk - 1 pc
  • Sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Yeast (A small sachet of granulated yeast.) - 7 g
  • Butter - 50 g
  • Vegetable oil - 1 tablepoon

For stuffing

  • Duck breast - 1 pc
  • Onions (Large onion) - 1 pc
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil (For sautéing onions and stewing duck breasts) - 6 tablespoon
  • Butter - 70 g
  • Rice - 3 tablespoon

For greasing the pie before and after baking

  • Vegetable oil (To grease the tray)
  • Chicken egg - 1 pc
  • Butter - 50 g

Slice duck breast fillets into thin slices.

Chop the onions in half rings.

Sauté onion until lightly golden brown.

Add 3 tbsp (0.3 ml) of butter and 3 tbsp (0.2 ml) of tomato slices to the pan. Put a tablespoon of vegetable oil, add the duck fillets cut into julienne strips, and braise over low heat until softened. Taste and season with salt and black pepper.

Combine fried onions and duck fillet stewed in a saucepan.

Rice (3 Tbsp. Spoon) rinse, add water to container, add washed rice, boil rice in salted water until al dente, then rinse in cold water. Combine the rice, onion and duck fillet stew, add 70gm3 of stewed duck. butter. Heat the mixture over low heat until the butter is dissolved.

Then add an egg (1 piece) and egg yolk (1 piece) to the yeast mixture. Whisk the mixture with a fork or whisk.

Add to the prepared mixture the salt (1 tsp. Spoonfuls of flour (3 cups) and add the entire mixture.). Add the dough. Cover the container with a towel or cling film and put in a warm place to rise.

After the first rise, knead the dough and let it rise again. Then you can begin to cut the cake.

Divide the dough into two parts. Roll out one part of the dough into a 4-5 mm thick layer. Place the layer of dough in a baking tin or tray greased with oil, lay the filling made of duck meat, onion and rice. Flatten out .

Roll out the second piece of dough and transfer it to the filling. Flip the side in the center. Flatten out. Decorate pie to taste. Make punctures in the surface of the pie to prevent tearing during baking and to allow steam to escape. Let the cake proof for 10-15 minutes.

Next, brush the cake with beaten egg and send it to a preheated oven for baking at 180-190C. Bake until golden brown.

Butter the ready hot cake to soften the crust.
