For the patties

  • Zucchini - 1 pc
  • Apple - 2 pcs
  • Onion - 1 pc
  • Garlic - 2 clove
  • Egg white - 1 pc
  • Dill - 1 bunch.
  • Seasoning (for meat) - 0.5 teaspoon
  • Sunflower oil ("oleina") - 3 tablespoon
  • Breadcrumbs / Breadcrumbs - 2 tablespoon
  • Black pepper (ground) - to taste
  • Salt - to taste
  • Pork (fillet) - 460 g

For the pastry

  • Puff pastry (2 plates) - 500 g
  • Sunflower oil ("Oleina" - to grease the dough) - 1 tablespoon
  • Hard cheese (grated, 50g) - 8 tablespoon
  • Sour cream (fat. 10% - to grease the petals) - 1 tablespoon

Sauce

  • Tomato paste (or tomato ketchup 2 tbsp.l.) - 1 tablespoon
  • Sour cream (can be replaced with homemade. mayonnaise) - 2 tablespoon
  • Melted cheese (with a slide.) - 1 tablespoon
  • Sunflower oil ("oleina") - 1 tablespoon
  • Seasoning (dried - "herb mix") - 0.5 teaspoon
  • Garlic - 1 clove
  • Black pepper - to taste
  • Salt - to taste

How to cook apple and zucchini pie "family" step by step with photos


1. Peel and core the apples and cut in half. Slice thinly: cut apples in halves and zucchini in rings.

2. Put the apple slices and zucchini in a bowl and pour water over them. Cover the bowl with a lid (I have a plate) and put it in the microwave. Boil until slices are pliable. Don't overcook! I cooked it 3 times and each time I checked for flexibility. Then drain the bowl and leave the slices to cool. Cut the zucchini slices in half.

3. Arrange the apple and zucchini slices in columns, alternating them. Create 16 sticks.

4. Let's make cutlets. I have "pork cutlet meat" not very fatty. You can prepare minced pork and beef (50*50). Cut the meat into small pieces and grind with a blender or meat grinder.

5. To the minced meat add finely chopped onion, pressed garlic and grated zucchini. Grated zucchini, that's small leftovers from sliced zucchini, edges (0.4 cups).

6. Add egg whites, finely chopped dill, meat seasoning, ground pepper mixture and salt to the stuffing. Stir .

7. Shape the stuffing into 8 patties and roll in breadcrumbs.

8. Fry the cutlets in heated sunflower oil until crispy, but not ready to serve.

9. Roll out the pastry and cut out a circle D=26cm.

10. Line the tin (F=26 cm) with baking paper and grease with sunflower oil. Lay out the pastry circle, brush with oil and prick with a fork.

11. Place cutlets on top of the pastry.

12. Cut the pastry into 8 pieces. Cut up to the cutlet.

13. Close the cutlets with the pastry segments.

14. Shape (cut with a sharp knife) the segments into petals.

15. From the second sheet of dough cut a small circle,...

16... and cover the middle of the pie.

17. Sprinkle the edges of the pie with grated cheese, preferably to melt when heated. I have cheese "Pochehonsky", Grate well on a coarse grater and it melts when heated.

18. Spread 8 stacks of zucchini slices and apple on the cheese.

19. Pour a thick sauce in the middle. It tastes sweet and sour, spicy. Sauce: Mix all the ingredients for the sauce, add pressed garlic clove, spices and taste. If sauce is sour, add sugar.

20. Place 8 stacks of zucchini and apple slices on top of the sauce. For the middle of the pie, form a rose. Cut 6 slices out of a sheet of dough, roll up and cut into 2 pieces. Make 2 rosettes. Make one rose out of 2.

21. Decorate the middle of the cake with a rose made of dough. Brush all the dough petals with liquid sour cream. Put the tray with the cake in the oven and turn the temperature to 40 C. After 20 minutes the pie dough will have doubled in size. Turn the oven to 180 degrees Celsius.

22. Brush the pastry petals with whipped egg yolk and bake the pie until golden brown, about 40 minutes. Test the pie with a dry match. The pie is ready! Cut a piece of pie with a patty and dip it in the cheese sauce. Enjoy!
