This pie is a symbiosis of several recipes. I had an urgent need to fix the apples, which were already "on the verge of fainting", And the quail eggs were frozen in the fridge. And when they were frozen, I decided to use them in the dough. So I had to fantasize to make it tasty and appetizing. I was more than happy with the fantasy result. Ingredients for pie "fancy":

  • Butter (into the dough) - 150 g
  • Sugar (for dough - 0,5 tbsp., In the filling, 0.5 tbsp.) - 1 glass
  • Wheat flour / Flour (200g for dough, 0.5 tbsp. for stuffing).)
  • Quail egg (for dough) - 4 pcs
  • Sour cream (into the dough) - 2 tablespoon
  • Apple (in stuffing) - 500-700 g
  • Dry red wine (in stuffing) - 100-120 ml
  • semolina (in stuffing) - 0.5 glass
  • Leavening agent (in stuffing) - 1 teaspoon
  • Berries (lingonberry and blueberry mix) - 1 glass

How to cook cake "fancy" step by step with photos

Mix sugar and flour, add butter and chop everything with a knife until crumbly.

Then add sour cream and eggs and knead the dough quickly. The quail eggs can be replaced with one chicken egg yolk.

Take a cake tin (preferably pie pan) (22 cm), put parchment on the bottom and spread the pastry on top, making the sides about 3 cm high. We put the pie plate in the fridge while the filling is ready, about 30 to 40 minutes.

Apples are cut into thin slices (you do not have to peel them), pour wine and put on the fire. Stew until apples soften, about 30 minutes. I used a dry red homemade grape wine "Isabella". I think red wine can be substituted for the flavorful white wine, "Nutmeg", like.

Mix flour, semolina, sugar and baking powder in a bowl. You can vary the amount of sugar, depending on the acidity of the apples, but do not add too much, otherwise the pie will be sugary-sweet.

Add the cooked apples to the dry mixture, which can be added directly from the stove without cooling, and mix everything well.

Take the dough out of the fridge and put the filling in it.

Place berries on top of the pie. The amount of berries can be increased/decreased as desired. But the berries should not be too few, because.к. They give the juice to the pie, making the pie pleasantly tender and moist. You can replace cranberries with cranberries, blueberries with blueberries, you may want to imagine your own variation! I really liked the lingonberry flavor - a bitter, special flavor that only this berry has. I really like lingonberries, in my opinion - they are the most successful berry for pies. You may sprinkle sugar on top of the berries.

Bake the pie in a heated to 200 degrees oven for about 40 minutes.

Let cool before you cut the cake, otherwise it will just fall apart.
