Yesterday our 8 year old son treated us to a dessert of his own making - thin slices of apple and garlic, sprinkled with granulated sugar on top. My dad ate and thanked my son, and I laughed a long time at this dessert, and then I realized - I haven't made my kids anything sweet for a long time! Immediately I started making a pie, a recipe I recently found on a Japanese cook's blog. The pie is simple, but easy and interesting to form, and it was also very tasty!

Ingredients for pie "flower" with jam:

  • Wheat flour / Flour (for dough) - 400 g
  • Butter (into dough ) - 120 g
  • Water (into the dough) - 180 ml
  • sugar (into the dough) - 40 g
  • salt (into the dough) - 6 g
  • Yeast (quick dissolving yeast for dough) - 3 teaspoon
  • Jam (peach, other can be used for filling) - 130 g
  • Vegetable oil (to grease a tray) - 2 teaspoon
  • Berries (for decoration, I have dried cranberries)
  • Chicken egg (to grease the dough before baking) - 0.3 pcs

The yeast dough, again, I knead with the bread machine, it kneads great! But you can knead the dough the normal way. I pour warm water into the bucket of the bread maker, add the yeast and leave it for 5 minutes.

Add sugar, salt and sifted flour.

I put the bucket in the baker and turn on the knead mode. After 5-7 minutes of kneading I add room temperature butter to the bucket of the bread maker. This is how to knead the dough and advise the Chinese and Japanese chefs, recipes from which I often exhibit. This time I did not deviate from this advice. I put the dough in a warm place until it doubles in volume (I left the dough to rise in the bread machine).

I transfer dough to table and knead,

Divide into 7 equal parts.

I make a ball of dough: first, I flatten a piece, then I gather the ends together and pinch the dough until it forms a smooth surface with no folds. I cover the dough with cling film and let it rest for 10-15 minutes.

From six parts of the dough I form "petals" Roll out a ball of dough (about 1 cm thick),

Fold in half,

Put the ends together.

I knead the seventh piece of dough and shape it into a ball again, since. к. All parts of the pie should enlarge evenly. I put a ball of dough in the middle on a greased baking tray, and around it "the petals".

I cover the cake with cling film and let it increase in size by about 2 times.

Using a pastry syringe without nozzle or a teaspoon, squeeze the jam around the central ball of dough.

Using a sharp knife, make a grid pattern notch in the center ball and brush the pie with beaten egg.

Bake the pie in preheated 180 degrees oven until golden brown, about 20-23 minutes.

I decorate the pie with berries, I have decorated it with dried cranberries and you can also use other fresh berries. The pie turns out very soft and not too sweet, but the jam adds sweetness. Next time I will make a layer of my favorite curd cheese under the jam. Enjoy your meal!
