Focaccia is a traditional Italian cake made with different types of dough: yeast dough, unleavened dough, muffin dough. These days, focaccia comes in all shapes and thicknesses, with or without additives and stuffing. My focaccia is a huge, delicious and soft cake with a filling of apples and berries, flavored with honey and cinnamon.

Ingredients for focaccia with buckwheat flour and apples:

  • Wheat flour / Flour (+1 tablespoon for sourdough + 50g for sprinkles) - 300 g
  • Buckwheat grits (TM "Mistral") - 100 g
  • Sour cream (with a slide) - 2 tablespoon
  • Yogurt (can be replaced with 1% kefir) - 200 g
  • Sugar (+1 teaspoon for sourdough) - 3 tablespoon
  • apple (peeled) - 400 g
  • Berry (any I have a large cranberry) - 1 handful.
  • Yeast (dry, fast-acting) - 1.5 teaspoon
  • Milk (warm) - 100 ml
  • Vegetable oil - 3 tablespoon
  • Vanillin - 1 sachet.
  • Starch - 1 tablespoon
  • Honey (liquid) - 1 tablespoon
  • Egg yolk (beaten with 2 teaspoon olive oil and 1 pinch. sugar) - 1 pc
  • Egg Whites (whipped) - 1 pc
  • Salt - 1 teaspoon
  • Cinnamon - to taste

How to cook focaccia with buckwheat flour and apples step by step with photos

1. Make sourdough. Dissolve 1.5 teaspoon yeast and 1 teaspoon sugar in warm milk (100 ml). Stir in 1 tablespoon of wheat flour and leave in a bowl with the sourdough for 20-30 minutes until it forms a foamy cap.

2. Take 100 grams of buckwheat grind in a coffee grinder, then sift twice.

3. Mix the dry ingredients; sifted wheat flour (300 g), buckwheat flour (100 g), 1 tsp. vanillin and salt.

4. Add 3 tablespoon sugar, 2 tablespoon sour cream (heaped), 200g yogurt, 3 tablespoon vegetable oil to the stew and mix together. Then add flour (400g) in batches of 1 tbsp. Spoonful. The dough is smooth and does not stick to your hands. Grease a large bowl with vegetable oil and add the dough. Scroll the dough until it is coated with a little oil. Cover the dough with a dry towel or clingfilm and put it in a warm place to rise two times.

5. While the dough is rising, prepare the apple filling. Peel the apples, remove the seeds and cut into small wedges. Mix the apple slices with the starch (1 tbsp. L) and liquid honey. If your apples are very sour (antonovka), add 1 tablespoon of sugar to the batter, but not to the apples.

6. Knead the dough once it has risen...

7... and divide into 10 equal parts.

8. Roll out 8 pieces of dough into flatbreads the size of a tea saucer and ~ 0.5 cm thick. Line a baking tray with a silicone mat or baking paper (grease it with butter). Transfer 4 flapjacks to the baking tray, prick with a fork.

9. Put apple filling on each cake, you can also add berries. Grease edge of cake with whipped egg white.

10. Then cover the filling with remaining 4 tortillas. Use your finger to crimp the edge of the focaccia and whipped egg white. The baked focaccia is very good increasing in diameter, the size of a dish for a second.

11. Form the two remaining pieces of dough into a ball and roll out a 35*18 cm long rectangle, sprinkle with sugar and cinnamon. Then divide it into 12 strips.

12. Braid 4 braids and decorate the focaccia. Put a towel over the baking tray and leave it in a warm place to rise 2 times (30 minutes). Then brush the cake tops with beaten egg yolk and bake in a preheated oven at 190-200° for about 30 minutes.
